Friends, this is one of the few beautiful sunrises we enjoyed this week here in central Oregon. Gorgeous, cold, and we can’t wait to sit on our front deck and enjoy our coffee. For now, we’re inside enjoying our coffee, and gazing out :)

This weekend is the big game. Will you be cooking, bringing a potluck dish, hosting, or … shopping? I know not everyone is into Super Bowl, but in case you are, today I’m sharing a yummy sandwich idea: Ground Turkey Stroganoff Baguette Sandwiches.

But more importantly, Haggis is ready (Mr. Marble Eyes with his canadian bacon tongue). We tried to let his hair grow longer this winter, but we reached a point where it was time. Time for a new cut!

His scarf has been quite the discussion in our home. The men don’t like it; I think it’s cute.

Haggis loves to graze and hang out with me in the kitchen when I’m cooking, in hopes of a few samples. It’s usually a piece of onion, pepper, or mushroom that lands in his mouth. We love our pup (13 this year), and he gets lots of cuddles and walks and … well, attention.

Now for the recipe. Saute the onion, peppers, and mushrooms.

Add delicious sun-dried tomato and olive pesto.

Take 2 baguettes and slice lengthwise (you can cut into 3rds first to make it easier).

We love fresh mozarella cheese.

Toast and serve HOT (while cheese is melted) with your favorite salad!

Ground Turkey Stroganoff Baguette Sandwiches

  • 1 Tbsp. olive oil
  • 1 small onion diced
  • 1 green pepper diced
  • 1/2 cremini mushrooms chopped
  • 1 lb ground turkey browned
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 6 oz. jar DeLallo Simply Pesto sun-dried tomato & olive
  • 1/2 c. sour cream optional
  • 2 baguette loaves horizontally sliced
  • 16 oz. fresh mozzarella cheese
  • Olive oil
  • 1/2 tsp garlic powder


  • Preheat broiler.
  • In a large skillet, heat olive oil over medium heat. Add onion, green pepper, and mushrooms; cook for 4-5 mintues until soft. Remove from the skillet and set aside.
  • In the same skillet, cook the ground turkey until browned, about 7-8 minutes. Add salt and pepper. Mix in the pesto and sour cream (optional, but holds together more when you use it).
  • Cut bread loaves in half lengthwise. Brush with olive oil; sprinkle with garlic powder and toast/broil slightly.
  • Lay bottom of baguettes in a 9×13 pan. Place the ground turkey mixture on top, adding sices of mozarella cheese. Broil for 4-5 minutes until cheese is melted.
  • Place the other half of baguette on top. Cut into 2-3 inch sub sandwich pieces; serve right away!

  3. These look yummy and that salad looks amazing. My husband is cooking chicken and dumplings and the kids and grandbaby are coming over to watch the game. Haggi looks adorable (I like the scarf). We have a miniature Dachshund who is 13 also. He is our baby!

  5. Okay, these sound so good and these are going to be pinned and made in the near future. I grew up with a variety of dogs but hubby is not a real “pet” person so no indoor pets and so I just decided no pets..though our oldest has a lab that we had for 2 1/2 years here before she got married.
