This “pumpkin-themed” board serves about 12 guests. You may have already tried my Tri Tip Sandwich Charcuterie Board or Epic Sandwich Charcuterie Board (both good for large parties!)

All you need is a big board, the ingredients (of course), and a cookie cutter in the shape of a pumpkin!

How to create the board

Here’s what you need to make this board. Fresh sandwich ingredients, like bread, ham, and your favorite toppings! And little chocolate mousse pumpkins from Trader Joe’s!

Oh, fresh apple slices!

  1. Add your favorite mustards or aioli sauce.
  2. To make the cheese slices, using a pumpkin cookie cutter, cut out thin slices of your favorite cheese (Harvarti and cheddar work great!).
  3. Add lettuce, red onion, tomatoes … more of your favorite toppings!

Use a pumpkin cookie cutter to cut out thin slices of cheese for fun ham sandwiches!

Ingredients
 

  • 1 baguette, sliced
  • 8 oz black forest deli ham
  • 10 oz Harvarti cheese slices, pumpkin shapes
  • 5 oz peppered salami slices
  • 2 pkg Trader Joe’s chocolate mousse pumpkins, 12 total
  • 1 head iceberg lettuce, pulled leaves
  • 2 Roma tomatoes, sliced
  • Truffle aioli
  • Chipotle lime sauce
  • Honey curry mustard
  • 6 pepperoncini
  • 1 cucumber, sliced
  • 1 small red onion, thinly sliced
  • Red apple, sliced
  • Red grapes
  • Pickles

Instructions
 

  • On a large board, arrange a small decorative pumpkin in the center. On either side, lay down the pumpkin mousse cake from Trader Joe's.
  • Around the outside place the sliced bread. Optional to toast the bread first. Next, lay down the salami and ham next to the bread.
  • In small bowls, add the sauces and pickles.
  • On the other side of the board, place the wedges of lettuce with a tomato. Next to the lettuce, arrange the cucumber slices and red onion.
  • Using a pumpkin cookie cutter, cut out thin slices of your favorite cheese (Harvarti and cheddar work great!). Lay it down between the meat and the center pumpkin cakes.
  • Add tongs and spoons and serve!
