Friends, just in time for the Eclipse today, I’m sharing a delightful recipe, Homemade Wholesome Hazelnut Spread!

But first, Puppy UPDATE! Having a puppy forces you to have more patience. LOL I’ve spent more time outside lately, just standing and waiting for him to pee and poop, and explore.

Alder, our Whoodle puppy, has been hanging around our yard only, since we still have one more set of shots to go, and we’re dying to take him on a walk.

Doubled in size, he’s now as tall as Haggis, and ornery as ever! (Yes, those would be pillows on top of the piano, Alder’s favorite chew toy — grrrr….)

Did I say ornery? Maybe more feisty and spunky, he has a very cute personality. (Haggis, PLEASE play with me!?)

Just in time for the eclipse, both pups are ready!

We’re going to a friend’s house today to share a community breakfast and watch the 2 minutes and 40 seconds of history together! (Haggis will stay home, with glasses on!)

Solar Eclipse 2017

Over the weekend, there’s been a massive invasion of people here in central Oregon, but we’re staying put in our tiny town. And we’re happy to be a part of the viewing, a total of 2 minutes and 40 seconds, right around 10:20 am! The next “perfect” eclipse visible won’t be until 2024 in USA!

Not too far from where we live lies the center line, in Madras and Mitchell, which is the area at which totality will occur the longest. This Great American Eclipse is not visible in other parts of the world, but others will be gathering in other American cities.

I was reading that what makes central Oregon the hot spot is the light pollution and weather, although we are sadly surrounded by forest fires right now. Which makes me wonder what exactly we will even see today?

Remember when we moved here to central Oregon, and how I said we enjoy 300+ days of clear, sunny skies a year? This is why millions are rolling into our area, because of the likelihood of clear skies!

We made this Homemade Wholesome Hazelnut Spread with Oregon hazelnuts, and other delicious ingredients!

The final products will be grainy and rich (not super smooth), but homemade and natural!

It also makes the perfect hostess gift!

Homemade Wholesome Hazelnut Spread

Ingredients

 

• 1 1/2 c. hazelnuts
• 1 Tbsp. cocoa powder
• 1 c. chocolate chips
• 3 1/2 Tbsp. coconut butter, not oil, it uses the full coconut
• 1 Tbsp. coconut oil
• 1 Tbsp. maple syrup
• 1 tsp. vanilla
• Pinch of salt

Instructions

 

• Puree hazelnuts until super fine in a food processor.
• In a double boiler, melt the chocolate and coconut butter; add coconut oil, vanilla, salt, cocoa powder, and maple syrup and heat until melted, gently stirring.
• After stirring, when smooth remove from heat and add to blended hazelnuts. Blend until fully combined.
• Final product will be grainy and rich (not super smooth), but homemade and natural!
• ENJOY!
