Hot Caramelized Onion Meatball Dip

Friends, don’t you love a hot, cheesy dip in the winter months, especially served at a Big Game party, or even sitting by a cozy fire, inside or out?
Because we love to serve snacks during Game Day parties that consist of lots of veggies, dips, fruits, and healthy options, we also love a hearty dish that fills our guests up!

Hot Caramelized Onion Meatball Dip
For this recipe, I cooked 3 large sweet and red onions. The longer you cook the onions (on low heat), the sweeter and more caramelized they become.
Preheat one package of Cooked Perfect Homestyle Meatballs (love the smaller ½ oz. bite-size meatballs), and then add to the caramelized onions. Just one package has 64 meatballs. That serves a lot of bites!
Add in the cheese; stir, bake, and serve hot with your favorite chip or cracker or pretzel stick!
Whether serving a snack, or a meal, being prepared is key for me; the key to easy entertaining. So I keep a few bags in the freezer, ready to defrost and serve (or make a quick recipe). These bite-size (1/2 oz.) meatballs are also delish for a family pasta night. (Mmm, spaghetti and meatballs!)

Hot Caramelized Onion Meatball Dip
Ingredients
- 1 package 32 oz. Cooked Perfect Homestyle Meatballs, but other varieties can be used!
- 2 Tbsp. oil
- 2 Tbsp. butter
- 2 large sweet onions, sliced
- 1 large red onion, sliced
- 1/2 cup water
- 4 ounces cream cheese, softened
- 1/2 cup mayonnaise
- 1/2 cup sharp cheddar cheese, grated
- Salt & pepper to taste
- Red pepper flakes
- 1 package 32 oz. Cooked Perfect Homestyle Meatballs
Instructions
- Heat the oil in a pan over medium heat. Add the onions and water, and cook until completely tender and caramelized and golden, about 45 minutes, stirring every 10 minutes or so, adding more water as needed.
- Mix everything and place it in a baking dish.
- Bake in a preheated 350F oven until the top is nice and browned and bubbly, about 30 minutes.
- Sprinkle with red pepper flakes (optional).
- Serve with crackers or chips or large stick pretzels.
