How to serve fish tacos

  • With corn tortillas
  • Make a mango salsa or serve fresh mango
  • Purple cabbage
  • Fresh avocados

Friends, the temps got down to the 30’s and reminded me of fall this past weekend. The beauty of living in the high desert of Central Oregon! I don’t know about you, but when the cooler weather hits, it really ramps up my to-do list.

Having people over

Speaking of a to-do list. Many of you reach out to me, saying you want to have people over, but you’re not sure during these times? It’s really up to you. We’ve definitely had outdoor dinners (on the smaller side, where we can social distance), and try to spread out on the inside. I can’t tell you what to do, but if you decide to move forward, keep these tips in mind.

My method is fairly simple for entertaining:

  1. Make a short list of what you need to do to make hosting easy and enjoyable. Jot down five meaningful tasks. These are the tasks you’ll take on to stay organized (and not make your family crazy).
  2. IE, make the invite. Decide what you are serving, and delegate a dish to your guests. Make as many notes as you need to for the cooking and shopping process (or use what you have in your fridge). Set the table, or decide how you will serve the food (or set all the dishes out early). If it makes you feel better, do a quick cleaning of the area where people will be.
  3. Put the list in order, and pick the top task. For me it’s the MENU first.
  4. Once you get that first task accomplished, move on to the next thing on your list.

Here’s what you need for the chipotle sauce:

  • Mexican crema
  • Mayonnaise
  • Chipotles in adobo—adjust to taste based on desired level of spiciness
  • Garlic
  • Honey OR sweet pickle brine
  • Lime
  • Salt to taste

Ingredients
 

Mahi Mahi fish:

  • 6 Mahi Mahi fillets
  • 2 limes, juiced and zest
  • 1/4 cup olive or veggie oil
  • 2 1/2 tsp kosher salt
  • 1 tsp pepper
  • 1 Tbsp chili powder
  • 1 1/2 Tbsp sugar or honey

To serve:

  • 6-8 large corn tortillas
  • Mango salsa or fresh mango
  • 1/4 head purple cabbage, finely shredded
  • 1-2 fresh avocados
  • Lime for serving

Sweet Chipotle Sauce:

  • 1/2 cup Mexican crema*
  • 1/2 c mayonnaise
  • 2-4 chipotles in adobo—adjust to taste based on desired level of spiciness
  • 1 clove of garlic, finely grated
  • 1 Tbsp honey OR sweet pickle brine
  • 1 lime, juiced and zested
  • Salt to taste
  • *If you can’t find the Mexican crema, substitute with creme fraiche, or more mayonnaise.

Instructions
 

  • Preheat grill to medium-high heat. Clean your grill grates well and wipe down with an oiled rag—this is to prevent sticking.
  • In a high-powered blender, combine the crema, mayonnaise, chipotles, garlic, honey, lime, and salt. Blend until smooth and thickened (if the sauce doesn’t thicken, it will still taste delicious).
  • In a large bowl, combine the oil, lime juice and zest, salt, pepper, chili powder, and sugar. Mix until combined, then add the Mahi Mahi fillets and toss to coat. Marinate for 10 minutes, then shake off excess marinade and place on grill. Cook for 3 minutes each side, then remove from heat.
  • Serve fillets cut in half on corn tortillas with chipotle mayo, mango salsa, avocado, cabbage, and fresh lime.
