Mandarin Mixed Greens Salad Recipe, a fresh salad with mandarin oranges, spicy pecans, and goat cheese. Gently toss with a citrus poppy seed dressing!
Friends, today I’m sharing a quick and easy Mandarin Mixed Greens Salad Recipe idea with a citrus poppy seed dressing (secret), delicious for last-minute company!
I love this recipe, because most of the time I have all the ingredients on hand. Or, you can try a Basic Green Salad that everyone loves!

Fresh greens, mandarin oranges, Trader Joe’s spicy pecans, red onion, goat cheese, and Briannas poppy seed dressing. You need a lemon, too, for the final touch!
After weeks of back-to-back snow storms in Oregon, when the sun came out this week and warmed everything up (oh my gosh, so much snow melted), we were happy campers!
We unburied the Sprinter van, got the pups groomed, and thought we’d shoveled off the last snow on our deck. Not!
We woke up this morning to more snow!

That didn’t stop us last week though, when we had company for dinner. We served one of my go-to salads, Mandarin Mixed Green Salad Recipe, with salmon and asparagus.
How do you jazz up a green salad?
In just 10 minutes, you have a healthy, delicious salad. You can also add fresh herbs (basil is wonderful) to this salad.
Jazz up the salad with mandarin oranges, red onions, and goat cheese! Or, we made this salad again and added fresh blueberries! Perfect for Easter and spring and summer hosting!
The secret is in the dressing … you can keep this poppy seed dressing stocked in your pantry, but you need to add fresh-squeezed lemon to make it light and fresh. And only add a drizzle–don’t drench the salad!
To jazz up a salad, think:
- Light dressing
What lettuce is in mixed greens?
I usually buy organic mixed greens, which usually includes romaine, oak leaf lettuce, arugula, frisée, and radicchio. Sometimes with spring greens there will be red leaf, and red and green mustard leaves with baby spinach!
Even though we’re loving the cozy Hygge vibe right now, I’m starting to feel a little restless. Do you feel that way in the snow?
When I think about change of scenery, and where I can travel, and start feeling discontented, I get my yack tracks on and head outside with the pups. Getting in the outdoors, even when it’s snowing, can really be a mood-booster.
Fresh air and sunshine
Fresh air (and sunshine) is medicine for the soul.
Also, having people over for dinner gets you out of your staleness. It makes you do a light cleaning of the house, think about new recipes (or not), and other people.
I say host as much as you can during the winter months.
You’ll be surprised by how happy you will be!
