I like to make appetizers that are served as bite sizes, easily picked up with your fingers! And I’m finding more and more, people do not want a heavy appetizer served before dinner. Just a few bites to nosh on is enough.
Mini Focaccia Sandwich Bites
So these Mini Focaccia Sandwich Bites are perfect, made with summer fresh ingredients!
Think summer ingredients–blackberries, cherries, strawberries, and cucumbers!
I simply cut the focaccia into small cubes.

Stack the bread, cucumber, basil, mozzarella, and berry; skewer with a toothpick. Repeat until all 16 are made.
Combine the olive oil with the balsamic, and a pinch of salt on top for dipping.
You can make them all uniform, or mix up the ingredients, which is what I love to do.
Let me just say, it’s a mouthful of summer, with cheese and bread, and a balsamic pop!

Over the weekend, we had out-of-town company, and I have to agree with the quote from Arthur. We did have fun, and it was the best time. (Ps. did your kids watch Arthur growing up like mine did?)
We hosted a couple dinners, did some tailgating, bike riding, and had many hours of just hanging out.
Fun= amusing, entertaining, and enjoyable.

Ingredients
- 16 1 1/2" cubes focaccia bread, (about 1/2 a small loaf)
- 16 mozzarella balls
- 16 blackberries, cherries, and strawberries
- 16 basil leaves
- 16 cucumber slices, about 3/4’’
- 16 tpothpicks or mini skewers
- Olive oil
- Balsamic vinegar
- Salt
Instructions
- Stack the bread, cucumber, basil, mozzarella, and berry; skewer with a toothpick. Repeat until all 16 are made.
- Combine the olive oil with the balsamic, and a pinch of salt on top for dipping. Serve skewers dipped in the oil with additional salt if needed.
