KitchenAid sent me this new product, and since then I’ve been putting it to work a couple times a week in my kitchen, and am loving the results.

There are 11 pre-programmed functions: Risotto, Rice, Simmer, Sauté, Sear, Boil/Steam, Yogurt, Slow Cook (High and Low), plus automatic Keep Warm, so I may be saying bye-bye to my old rice cooker and slow cooker since this does the same work.

For my recipe today, I used Rodelle’s Texas Style Brisket Rub seasoning, which we also cannot wait to try with grilling recipes this summer! It’s delicous on chicken, pork chops, and steak. Oh, boy!

I prepared the chicken thighs in the rub (set aside).

Cooking process begins.

Many slow cooker recipes call for mixing all recipe components together in the crockpot, turning it on, and walking away. Sometimes the convenience of this method does not make the food too flavorful in the end (my experience), where as this Multi-Cooker can sear, caramelize, and saute–all in one pot!

The temperature can be put on different settings, or you can manually change it. It also has a programmable timer! It comes with very easy instructions, too!

Sear the chicken on the 450 degrees Sear setting, in several batches, at 1 minute on each side (transfer each batch to a plate and set aside).

Next I added garlic and onions, for 1 minute, and then the sweet potatoes and mushrooms for 2 minutes, stirring while cooking; lightly add salt and pepper. I then switched the temperature to Saute mode {350 degrees} and added the white wine.

Place the chicken back on top of the vegetables and put the lid on!

45 minutes or 4 hours – your choice.

Next, you have 2 choices. You can use the LO slow cooker mode and cook the chicken for 4 hours, or you can keep it at Saute 350 mode and cook for about 45 minutes!

Chicken Thighs with Sweet Potatoes

One-Pot Chicken Thighs with Sweet Potatoes

One-Pot Chicken Thighs with Sweet Potatoes is flavorful, healthy, and good enough for company! You can cook it 2 ways: At 350 degrees for 45 minutes, or on Slow Cooker LO for 4 hours. Use your favorite rub, spice, or seasoning to coat the chicken before cooking.

Ingredients:

  • 3 lb skinless, boneless chicken thighs, fat trimmed
  • 2-3 Tbsp. Texas Style Brisket Rub (I used Rodelle. Use less if you like less spice! You can also use your favorite seasonsings or rub)
  • 3 Tbsp. olive oil
  • Pressed garlic
  • 1 large onion, sliced
  • 8 oz. cremini mushrooms, left whole if small (or cut in half if large)
  • 2 lbs. sweet potatoes, peeled and cut into 1-inch chunks
  • 2 cups white wine

Directions:

  1. In a Ziploc bag, combine about 2 T. Texas style brisket rub; add 4-5 pieces of chicken at a time, lightly shaking. Place the chicken on a large plate. Repeat the process, adding more spices if needed, until all the chicken has been lightly coated.
  2. In the KitchenAid Multicooker, heat the oil at the 450 degree temp SEAR setting. Cook the chicken in batches, 4-5 pieces at a time, for 1 minute on each side. (About 4 thighs fit in the pot:) Transfer each batch to a plate and set aside. Repeat the process until all the chicken has been lightly cooked.
  3. Add the garlic and onion to the Multicooker, stirring for about 1 minute. Add the mushrooms and sweet potatoes and stir another 2 minutes. Sprinkle with salt and pepper.
  4. Gradually pour the wine over the vegetable mixture; bring to a boil. Turn the Multicooker to 350 SAUTE mode, cooking the vegetable mixture for about 5 minutes, stirring occasionally.
  5. Place the chicken on top of the vegetables and cover with a lid.
  6. Change setting to: 1) LO SLOW COOKER and cook for 4 hours. 2) 350 SAUTE and cook for 45 minutes.
  7. Taste and adjust the seasoning with more salt and pepper if needed before serving. Serve hot!

    What to cook is a bit more tricky. I think I’d like to put the cooker through its paces by choosing a recipe I adore, Bigos, Hungarian hunters stew.
