Summer Fresh Peach Avocado Salad

Last night was a special night. All of our kids were home, and we cooked a fresh dinner with seasonal foods—my favorite kind of meal.
Of course, having everyone together around the table (inside, because of a small local fire) was the best part of the evening. More important than good food, we enjoyed the togetherness– catching up, laughing, always a little bit of “roasting” going on.

These moments are precious, carving out family time and putting a little bit of love into a home-cooked meal. This may seem like a simple dinner, but truly, with the freshness of seasonal food, and just being together—it becomes an extra-ordinary meal! You may have tried my Easy Peach Caprese Salad recipe or Oregold Peaches Quinoa Salad – both so very good!
Food tastes better with good friends
Haven’t you noticed that when you’re with people you really enjoy and love, that food tastes better?
This past week has been so full for me, as we dined with quite a few friends. We went to Portland to stay with Paul’s childhood friend and his family, who, by the way, served this fantastic salad that I’m sharing with you today. On the way up, my childhood friend and her husband took us to lunch and showed us around their town. We also stayed the night with a couple we’ve known for 15 years—our kids grew up together. So special to laugh and be with the people you know so well, and who know you so well.
On top of that, we were invited for nibbles and wine at our dear friends’ home, people we hadn’t connected with in a long time. It felt like coming home. And we hosted a couple who recently divorced, and then remarried—a true miracle story of forgiveness and renewal.
So, this was a week full of beautiful friendships–both old and new–can you tell my cup overfloweth? It might have been a bit of overload for my husband (who’s more of an introvert), but for me, the extrovert, I was in heaven! HA

Back to our meal last night. We served steak, salad with garden tomatoes, a fresh baguette, and this delicious Peach Avocado Salad for dinner. So easy!
Start with fresh peaches, layer the avocado … and a few more ingredients. A salad that takes less than 10 minutes to make, and oh so summery-good!
The homestretch with kids
We’re entered a homestretch with our kids. I’ll share more later on who’s doing what, but the day-to-day, helping-with-all-the-details-kind of parenting, which I’ve defined myself by for so long, has come to an end. The role is not to manage any longer, but to guide, trust, encourage and love. What an honor for me and Paul!
We’ve bolstered our kids with purpose and courage, as now we sit back—usually it hits us in the gut when we’re gathered around the table–and we watch their dreams unfold.

Peach Avocado Salad
Ingredients
- 3 peaches, peeled and sliced thinly
- 2 avocados, peeled and sliced thinly
- 1 Tbsp. red wine vinegar
- 1 Tbsp. olive oil
- Salt and pepper
Instructions
- Slice the peaches and lay on a tray or in a shallow bowl. Slice the avocados and place on top of the peaches.
- Drizzle with red wine vinegar and olive oil. Salt and pepper; serve!

I hear you about the children. One married now…two on the edge of the nest, and little caboose, a bundle of 17 year old guy energy…oh my! It is such a privilege though to watch our children mature and take flight. My more mature neighbor always said, ‘Roots and wings Donna.’ She was so right….deep, roots, great foundation and then wings to soar high. ?
Sandy always loving this salad of yours. One question does the vinegar keep the fruit from turning brown? I was thinking of cutting the fruit into cubes and using it as an appetizer. Thanks and best to you!
That looks different but sounds good and unique. I think for me, something that makes a meal extra-ordinary is my joy and attitude while preparing it. Bummer about the smoke and fires. We were down there one year, can’t remember when, when the huge one outside of sisters was just about out. Crazy! We drove home the “back” way and through where it had burned…so sad the devastation.
