Peach Caprese Bites
Summer evenings call for late night dinners, mingling around the table a little longer than normal, and any food dish made with juicy peaches (like these little Peach Caprese Bites !) Sometimes it’s better to skip the bit appetizer tray, and just set out pre-made kebabs to nosh on before the big meal.
Why we love this recipe
- Our family is crazy about peaches!
- We love to savor white peaches in appetizers or chicken dishes, cobblers and crisps.
- Easy to make-ahead (they don’t get soggy).
Gather these ingredients
Peaches: fresh peaches (we love white peaches, but you can also use yellow)
- Fresh basil leaves
- Tiny mozzarella balls
- Balsamic reduction: we use DeLallo brand
- Fresh blueberries
- Sea salt and freshly ground black pepper
How do you make Peach Caprese Bites?
- Spear the blueberries, peach, mozzarella, and basil onto a 4-inch-long skewer or toothpick. End with another blueberry or two.
- Repeat until you’re out of peach cubes.
- Drizzle with balsamic reduction, to taste. Sprinkle with salt and pepper.
Tips and substitutions:
This recipe makes about 12-16 skewers.
Swap out the peaches for nectarines.
Leave out the blueberries if you just want peaches, mozzarella cheese, and basil.
Balsamic glaze is optional (but very tasty!)
This recipe consists of white peaches (but you can also use summer ripe yellow peaches).
Then you can decide if you want to add a tomato or not. Caprese salads are made with tomatoes, but in this case, I wanted to skip them for a more fruity, sweet flavor.
On a toothpick or skewer, layer the 2 blueberries, a chunk of peach, one mozzarella ball, and fresh basil, ending with a blueberry.
The very best balsamic glaze in the world? The best is Delallo Food’s, so we buy a box of 6 and treat it like gold. But you can also buy it at Trader Joe’s (a tiny bit different in flavor and texture).
I’ve actually given away bottles of this drizzle for hostess gifts! (YUM!)
Try these Summer Peach Caprese Salad Bites at your next party and your guests will say … WOW!
