Peanut Butter and Jelly Crumble
I love this for summer, 4th of July, or a pool party dessert! It’s just delightful and delicious!
Also, don’t forget to try this fabulous Summer Fruit Upside Down Cake (made with pistachio), or Easy No-Bake Berry Cream Cheese Bars–also great for the 4th of July!
This Peanut Butter and Jelly Crumble recipe is essentially a crumbled peanut butter cookie over a delicious berry compote… A peanut butter and jelly lover’s dream. :)
How to make the PB&J crumble topping
In a stand-up mixer, or using your hands or a wooden spoon, combine flour, butter, peanut butter, sugar, vanilla, oats, and salt on a low speed—stop the mixing before all ingredients are well combined—there should be a decent amount of unmixed flour throughout the crumble dough.
Here’s my friend Dorothy’s post, How to make crumble toppings for fruit pies (for a different spin) and I also love these fruit crumble jars.
In a square baking dish, pour in berries, and sprinkle coconut sugar on top and mix gently with your hands.
Next, sprinkle on the peanut butter crumble, and place the pan in the oven for 30-35 minutes, or until the crisp is golden and berries are bubbling.
Blogging and RE
I’m often asked how and why I keep blogging. There are so many reasons I keep up this grand adventure of blogging, but on the top of the list is relationships and opportunities. The chance to travel the world ranks up there pretty high.
As I write this, I’m in Australia [follow along on Instagram] with my husband! He’s speaking in schools here, and I love to tag along and support his mission. At the end of the trip we love to explore new places for RE!
I also love creating recipes and charcuterie/dinner board ideas and sharing them you!
Having a blog just opens us to seeing new places, creating experiences you would never had thought of, meeting new people, and inspiring others to think about hospitality in a new light (in my case).
Here on RE, I love to focus on recipes that help people gather more, which I also love!
