Stuffed dates with peanut butter
This is a wonderful last minute dessert recipe! All the ingredients are likely ones you already have in your pantry! Its salty, sweet, and satisfying.

- Medjool dates
- Peanut butter (chunky, salted)
- Medium shredded unsweetened coconut
- Honey
- Flake salt
Are stuffed dates good for you?
Well, yes! Dates are a healthy source of vitamins, minerals, and fiber. And yes, they are high in sugar, so we do eat these in moderation.
How to make stuffed dates:
- Remove pits from dates, fill with 1-2 tsp peanut butter, then roll the exposed peanut butter in the coconut shreds.
- Plate the dates, then drizzle lightly with honey. Sprinkle with flake salt and serve at room temperature or lightly warmed in the microwave.
Can you freeze dates?
Stuffed dates freeze well, too. You can make a batch and freeze on a baking tray until frozen. Then pop the frozen dates into a Ziploc bag and take out as you need a little bite of LOVE :)
These dates are best eaten at room temperature.

How do you make stuffed dates?
Remove the pit from each fresh date by pushing them out with your fingers. Next, make a slit with a knife and then stuff with your favorite ingredient.
Oh, and have you tried peanut butter and Nutella combined? DELISH!
TIP: Be careful when making the slit that you don’t cut the date in half; you just want to make a crevice in which to add the peanut butter.
