The Instant Pot is perfect for making rice, because you don’t have to account for liquid that evaporates during the cooking process (as you would with stovetop). It takes all the guessing out and allows you to work with a 1:1 rice to liquid ratio.

Cooking this way is perfect for meal prep. If you want to make more than 2 cups, bump it up to 3 cups rice and 3 cups liquid (a 1:1 ratio)—just don’t exceed the maximum capacity of your Instant Pot. Oh, and here’s a recipe to make with leftover brown rice: Mexican Rice Salad. Also try this Garlic Kale and Brown Rice Salad with a zippy lemon herb dressing!

Ingredients for Instant Pot Brown Rice

  • Short grain brown rice
  • Chicken or vegetable stock, or bouillon paste and water
  • Oil (you can use olive oil, sesame oil—any kind of oil)

How do I cook brown rice in my Instant Pot?

  1. Soaking brown rice is debatable, but we always rinse our brown rice, at least once. Wash your rice in a fine mesh strainer until the water comes out clear.
  2. Start the Instant on high pressure, manual setting. Add the vegetable stock and oil to the pot as it heats up. You will be cooking the rice for 22 minutes on high pressure.
  3. Transfer the rice to the Instant Pot and stir into the broth and the oil; taste the broth for salt and add more if needed. Stir to combine, then secure the lid on top. If you didn’t preheat the vessel, set to manual, high pressure and set the timer for 22 minutes.
  4. When the time is up, allow rice to sit for 10 minutes as the pot naturally releases. When the 10 minutes are up, finish with a manual pressure release.
  5. Remove the lid from the pot and give it a stir. I typically add soy sauce, lime juice, lime zest, and fresh herbs afterwards for a more flavorful rice.

Can you cook brown rice in a rice cooker?

Yes! I have a delicious Best Parmesan Basil Brown Rice Recipe (Mm-m-m, try it with this Baked Chicken Breasts with Roasted Grapes. After rinsing the brown rice, we use the 1:1.5 ratio for the slow cooker. This means for every cup of rice, you add 1 1/2 cups of water (or broth).

The goal for connection

We can’t wait to gather with a few more people in our home, hopefully soon! The secret to gathering is more than the delicious food or beautiful table (that’s never been me), but what your guests remember most: conversation.

Stimulating conversation around the table is an art. It doesn’t just happen, but it’s intentional, at least for our family.

The goal of connection and the reality that guests feel loved and at home around the table is what I look forward to most when we host in our home.

Of course, a delicious plate of food (where everyone is pretty much eating the same thing), is the conduit to all of this.

We like to think of entertaining as not wasting any good moments, but intentionally choosing the goal of being together: A topic of conversation that includes everyone.

ENJOY!

Instant Pot Brown Rice

The Instant Pot is perfect for making rice, because you don’t have to account for liquid that evaporates during the cooking process (as you would with stovetop). It takes all the guessing out and allows you to work with a 1:1 rice to liquid ratio. This is PERFET for meal prep. If you want to make more than 2 cups, bump it up to 3 cups rice and 3 cups liquid (a 1:1 ratio)—just don’t exceed the maximum capacity of your Instant Pot.

Ingredients

  • 2 c short grain brown rice, rinsed
  • 2 c chicken or vegetable stock, or bouillon paste and water
  • 2 Tbsp oil, sesame, olive, etc.

Instructions

  • Start the Instant on high pressure, manual setting—this will save you some time as it begins to preheat. Make sure to add the vegetable stock and oil to the pot as this happens, as you don’t want to heat the pot dry.
  • Rinse the rice in a fine mesh strainer until the water comes out clear.
  • Transfer the rice to the Instant Pot and stir into the broth and the oil; taste the broth for salt and add more if needed. Stir to combine, then secure the lid on top. If you didn’t preheat the vessel, set to manual, high pressure and set the timer for 22 minutes.
  • When the time is up, allow rice to sit for 10 minutes as the pot naturally releases. When the 10 minutes are up, finish with a manual pressure release.
