It’s a busy season for our family, with lots of entertaining possibilities. In our family, we celebrate 4 birthdays, Mother’s Day, Father’s Day, our anniversary (this year 24 years!), and Fourth of July all within a 6 week period. That’s a lot of parties!

Putting together the perfect spread is pretty easy, especially since I’m pretty adamant in delegating a dish or two. Everyone pitching in for a meal makes for a great spread, that is for sure.

Bite-sized appetizers.

One thing I’ve learned when serving appetizers is to make sure that, unless we’re sitting down and able to juggle our drinks and a small plate and fork, to make all appetizers bite-sized. Something easy to hold in one hand on a napkin while you take a sip from the other hand. If it’s a last-mintue engagement, I usually keep pistachio nuts on hand! (I just picked these climbing roses from our side yard a few days ago – gorgeous!)

I like to think of appetizers as simply 3-4 ingredients, built on a piece of toast or baguette.

Pickled Green Bean Salami Rolls.

For today’s recipe I gussied up some cream cheese, and added salami, dill, and a pickled green bean. Can you say, yum?

No bread at all, perfect for the gluten-free crowd.

Pickled Green Bean Salami Rolls

Usually any appetizer with mayonnaise or cream cheese, with a tasty herb, sometimes mix in a cheese–is a good place to start. It’s always tasty with meat … salami, ham, smoked salmon, or a slice of beloved bacon.

If you want to serve really healthy, you can make a crudite platter, which everyone loves—with olives, dips, lots of veggies. You can even add nuts to it.

Less is more.

Remember for appetizers, less is more. You don’t want to offer too much food to your guests before the main course, and make them stuffed to the gills.

My appetizer today is easy to pass around on a tray, and serve on a napkin.

It’s salty, flavorful (I am a dill lover!), and has a nice crunch. The perfect first course bite!

  • Soften the cream cheese and mix in the dill. Spread about 1 tsp. on a thin slice of salami; place a green bean in the middle.
  • Roll from one side to the other side, salami around the green bean.
  • Sprinkle with red pepper flakes (optional).
  • Serve on a platter with small whole tomatoes.
