Mango Avocado Salad with Fresh Prawns

Happy Spring! Our daughter is coming home this week for spring break, and I couldn’t be more excited. I was thinking, this next year she will be a senior in college, and we won’t be talking about “spring break” for years to come (only when and if that blessed time comes and we’re grandparents). How life changes so quickly!

Celebrating the first day of spring always makes me want to have a fresh salad for lunch! :)

This recipe is so easy, anyone can make it! :) And better yet, if you love seafood, check out my “seafood” page her at RE! A few of my favorite recipes are Thai Noodle Seafood Dish and Classic Bay Shrimp Pasta Salad. Oh, and don’t forget this classic recipe: Classic Shrimp Salad with Thousand Island Dressing.

For years we’ve celebrated “spring” around the time our kids had spring break from school, and then college. The gesture of celebrating spring by giving a gift of nature is a wonderful tradition, as we often did outdoor activities with the family. Probably our fondest memories were coming over to central Oregon for a week, and whether snow, rain, or sunshine, we loved the outdoors.

Now we get to live here year-round, and we still have to pinch ourselves.

For our family, just reuniting in a place that we all love, and where we can relax and eat good food together … well, we can be happy just keeping it simple.

Cooking and eating fresh foods like this Mango Avocado Salad with Fresh Prawns, doing a puzzle, watching movies, and heading out on family walks and hikes is always a favorite.

Cook the prawns ahead of time and chill.

The sweet lime dressing has a “kick” that adds the perfect flavors to the salad.

And avocados are our favorite! We could eat them at any meal.

For us, spring break is a special time. It’s a time to be together as a family.

Living in the moment.

Honestly, these less-glamorous moments will be just as vibrant to our kids in years to come, than a glitzy vacation. :)

Happy Spring!

  1. Thank you so much for sharing this, I’m printing it out.

How nice that your daughter is coming home.  I recall you sharing with us about her playing the violin.  My daughter also played for several years,  stopped this year ( 7th grade) and now wants to start back up again.  How is your daughter doin with it?  Does she still play now that she’s in college?

Thank you for all that you share, I love reading your blog from my home in Central California.

  2. I think this would be really good with salad shrimp if someone doesn’t like large shrimp. Looks good for a summer BBQ as well.
