A beautiful, unexpected moment is one that I’ll remember for the rest of my life. Like the date night I had this past weekend with my husband, Paul, and our 2 pups.
Heading to the lake right before dusk, we were able to enjoy so much beauty at Devil’s Lake, right outside of Bend.

With so much sadness in the world right now, it’s a good reminder to be actively grateful and not to forget that all of our lives will end. We are not guaranteed another day. I’ll be the first to admit, I need to focus on this more. Life is short.
Which is why I love date nights with my husband. We try to get out of the house to share a meal together at least once a week.
This time is was quiet, adventurous, awestruck-gorgeous, and super fun with our pups!
We sat by the water and shared a bottle of Noble Pig wine (in our Hydroflask), and munched on prosciutto, cheese and a baguette. The perfect snack. [The Hydroflask 25 oz. wine bottle comes in these fantastic colors, as do the 10 oz. wine tumblers – so cool!]
There are too many good things in my life not to try to do better. And prioritizing time in nature, with those I love, is first on my list.

Super simple, and our family LOVES it.
Add the kale and pasta toward the end; serve with Parmesan cheese on top!

Sausage Kale Comfort Soup Recipe
Ingredients
- 2 Tbps. olive oil
- 2 sweet white onions, diced
- 8 strips bacon, diced
- 2-3 cloves fresh garlic, pressed
- 1 pound sausage, cut in small pieces (we buy Organic Smoked Beef Sausage)
- 2 cups sliced carrot, from 4 large carrots
- 2 cups sliced celery, from 4-5 large stalks
- 8 cups chicken or beef stock
- 2 tsp. salt
- 1 tsp. freshly ground black pepper
- 5 thyme sprigs
- 2 cups favorite pasta, I used DeLallo's Penne
- 4 cups kale, chopped in small pieces
- Parmesan cheese, optional
Instructions
- In large skillet over medium-high, heat the olive oil. Add the onions and cook for 4-5 minutes until tender. Add the chopped bacon and garlic and cook for 3-4 more minutes. Add the sliced sausage and cook additional 2-3 minutes.
- To the same mixture add the carrots and celery and saute on low heat for 5 mintues, stirring often.
- Salt and pepper the mixture. Add stock and thyme sprigs to mixture and bring to a boil; turn down to low. Cover and simmer on low for 2 hours. Add the pasta 15 minutes before getting ready to serve; cover with a lid.
- Cook on low until the pasta is al dente (do not over cook), usually about 8-10 minutes (it's different for each type of pasta).
- Add the kale; salt and pepper to taste. Remove the thyme sprigs. Cook on low until the kale is soft. Serve hot with fresh Parmesan cheese!
