Oh, and the GIANT charcuterie board? I bought it at Pier 1 here in Bend, Oregon. And YES! We lined the tray with parchment paper before putting food on it. :)

Tortellini Sausage Skewers Appetizer

Ingredients:

  • Favorite tortellini, cooked, drained, cooled
  • Mozzarella balls
  • Cherry tomatoes
  • Fresh basil leaves, folded
  • DeLallo Ready Pack Pitted Seasoned Olives Jubilee, drained
  • DeLallo classic cured meats, sliced
  • DeLallo Domestic Swiss Cheese Wedge, cut in small pieces
  • Wooden skeweres
  • DeLallo Balsamic Glaze

Directions:

  1. Skewer the ingredients on a wooden skewer, alternating the food until the skewer is full.
  2. Right before serving, drizzle with balsamic glaze; serve!

  8. Wow! Love this post — read about your get together over on Foodie Crush. I am from Bend, and my husband and I are hoping to move to Sunriver next summer (we have been living in Malaysia for 8 years — now our son just turned 2 and I want him to be closer to family). We always spend a few days out in Sunriver relaxing when we are home visiting my family, and it just seems like a great spot for us since we work remotely and don’t have to drive into town every day for work. And have the flexibility to spend months in the tropics in the dead of winter :) Beautiful board!
