Friends, we’re already talking holidays, are you? We already have our guest list for Thanksgiving, and I can’t believe I’m thinking about the menu already. Some of my favorite fall and Thanksgiving dishes are salads!

I always cook a standard Thanksgiving menu, but try to throw in a new salad or two each year.

So today I think you’ll love my spin on a classic shrimp salad. :)

How to make a layered salad

  1. All you need for this salad is lettuce, baby shrimp, and cocktail sauce.
  2. Layer in the black olives, red onion, and tomatoes.
  3. Top with soft cooked eggs, and my favorite (yum) Thousand Island Dressing. Did you know I have a delicious recipe here on my blog! Try this Best Thousand Island Dressing if you want to make your own!
  4. Final touches are sliced avocado, and fresh chopped parsley, with a little cracked pepper!

This year, there’s a change in the air. Our middle son has moved to China, so it’s left us with a new dynamic in the home (and a mama’s heart missing her son!) 

We’re happy he did not take Alder the Whoodle with him. :)

Maybe it’s the change under our roof, or the fact that my fingers are flying here to write this post today, but I say bring on the holidays.

This Shrimp Cocktail Layered Salad is a spin on the standard Shrimp Cocktail appetizer, but served in a beautiful parfait salad bowl, with fresh garden ingredients.

2 ways to serve this salad

There are two ways to serve a layered salad.

  1. Leave it in the dish and let people serve themselves (yes, this is very messy, and not well distributed).
  2. Right before serving (easy to bring to a party, and pretty, too), dump in a large bowl; toss before serving. Serve with salad tongs!

Shrimp Cocktail Layered Salad

Ingredients
 

  • 1 1/2 medium head iceberg lettuce, shredded
  • 2 pounds baby shrimp, rinsed and well drained
  • 1 cup cocktail sauce
  • 3.8 oz can sliced black olives, drained
  • 1/2 small chopped red onion
  • 2 Roma tomatoes, diced
  • 4 boiled eggs, quartered
  • 1/2 cup Thousand Island Dressing
  • 1 avocado, sliced
  • Fresh parsley, finely chopped
  • Fresh cracked pepper

Instructions
 

  • Mix together the shrimp and cocktail sauce in advance and allow to drain (push the liquid out).
  • In a parfait dish, lay down 1/2 of the lettuce, then half of the shrimp mixture.
  • Then layer the olives, onion, more lettuce, and tomatoes.
  • Add more of the remaining shrimp, and arrange the eggs, dressing (in the middle), and avocado.
  • Garnish with parsley and fresh cracked pepper.
  • Cover and refrigerate until ready to serve!
