If you’re looking for skinny pasta recipes, today I’m sharing a Skinny Marinara Zoodle Pasta recipe, a healthy recipe of spiralized zucchini with marina and your favorite meatballs (you can make ahead and freeze, or buy pre-made) to serve to your family this week!

Skinny Marinara Zoodle Pasta
In no time, we whipped up a delicious marina sauce, attached the spiralizer to our KitchenAid stand mixer, making zoodles, and created a delicous, romantic, and I must say, healthy, pretty dish!

Skinny Marinara Zoodle Pasta
Ingredients
- 2 Tbsp. extra virgin olive oil
- 1 medium sweet white onion
- 6 garlic cloves, peeled and minced (or pressed)
- 1 28-ounce can diced tomatoes (do not drain)
- 2 Tbsp. tomato paste
- 1/2 cup fresh basil leaves, chopped
- 1 1/2 tsp. coarse salt
- 1/4 tsp. black pepper
- 1/8 tsp. crushed red pepper flakes, or a pinch of cayenne
- 8-10 small zucchinis, spiralized
- Freshly-grated Parmesan cheese, for grating
- Prepared meatballs – optional, I buy Aidells brand
Instructions
- Heat oil in large pan over medium-high heat. Add onions and saute for 5 minutes, stirring until the onions are soft. Add garlic and saute for 1 minute, stirring frequently. Add in the tomatoes, tomato paste, basil, salt, pepper, and crushed red pepper flakes, then stir to combine.
- Continue cooking for 5 minutes, then turn the heat down to medium-low and simmer for 15 minutes. Taste, and season the sauce with additional salt and pepper if needed.
- Add in the prepared meatballs (optional).
- In the meantime, using the KitchenAid spiralizer, spiralize the zucchini . Place the zucchini on paper towels and salt, allowing to sit for 30 minutes. In a large saute pan over medium heat, heat the oil and toss the zucchini noodles, cooking for 2-3 minutes, right before ready to serve.
- Place the zoodles on a plate, spooning sauce on top, with several meatballs. Sprinkle with fresh Parmesan cheese; garnish with fresh basil leaf and serve!

I have not tried Zoodles or enjoyed any recipes made with a spiralizer so this is new to me. I would start with your recipe using zucchini to substitute for pasta. A salad would be fun too especially the cucumbers and carrots as zoodles.
