Skinny Pink Salmon Green Salad Recipe
This salad is super easy if you keep greens and veggies in the fridge, hard cooked eggs ready to go, and pink salmon in the pantry.
We like to buy the 6-pack Wild Alaskan Pink Salmon (boneless and skinless) cans from Costco.
Drizzle with olive oil and balsamic vinegar.
Ingredients for skinny salmon salad
This week I enjoyed it with my husband for lunch.
All you need for this salad are these ingredients:
- Butter lettuce & radicchio
- Pink salmon (from can or use leftovers)
- Cherry tomatoes
- Grated carrots
- Boiled eggs
- Red onion
- Avocado
- Microgreens
- Olive oil
- Balsamic vinegar

Ingredients
- 4 cups 7 oz. bag butter lettuce & radicchio
- 1 6 oz can pink salmon, drained, flaked
- 1 cup cherry tomatoes
- 1/3 cup grated carrots
- 2 boiled eggs, peeled and cut in half
- 1/4 cup red onion, diced
- 1/2 avocado, sliced
- Microgreens, optional
- Olive oil
- Balsamic vinegar
Instructions
- Arrange in a large bowl all salad ingredients.
- Drizzle with olive oil and balsamic vinegar; serve!
I love a good salad. We are trying to get into some new and better habits here too. I just looked up the yoga video and they have a 30 day challenge for beginners I might look into since the other looked a little too hard for me…lol
