Now, sitting quietly on my kitchen stool, I discover there are a few thoughts that come to mind when it comes to banana bread. Life has moved toward tender and lovely, as our family has changed and the kids have grown.

Nope, no need to refrigerate the Banana Bread, but it’s best if you you can keep it in an airtight container in a cool place. We also wrap the bread in plastic wrap, then a layer of foil, and we freeze the bread.
You never know when you’ll need it :)

How to bake banana bread
I love to make this recipe in my favorite ceramic loaf pan. I slice it warm with this serrated knife and add a hunk of butter.
How to bake banana bread to perfection really depends on the size of your pan. You can bake this recipe in 1 loaf (which will take longer) or smaller loaves (which take less time).
Always check the bread in the middle with a toothpick to see if the loaf is done baking, before removing from the oven.
If the batter sticks to the toothpick, bake a little longer.
Sour Cream Banana Bread
Everyone loves it — perfect for a snack, to give away to a friend, neighbor, or teacher, to send in a care package, whip out of the freezer and serve for out-of-town guests at breakfast.

Sour Cream Banana Bread
Ingredients
- ½ cup (1 stick butter) butter, softened
- 1 cup sugar
- 2 eggs, beaten
- 1 ½ cups flour
- 1 tsp. baking soda
- ½ tsp. salt
- 1 cup mashed bananas, about 3
- ½ cup sour cream
- 1 tsp. vanilla
- 1 cup walnuts, chopped (optional)
Equipment
- 9-inch loaf pan (I like this ceramic one from Good Cook)
- Large bowl (These glass bowls are so handy for baking)
- Hand mixer (I like that this Cuisinart mixer has 5 speeds)
Instructions
- Preheat oven to 350 degrees. Grease and flour one 9-inch loaf pan (or 3 small ones). Pan should be 3/4 full of batter.
- In a large bowl, cream the butter with sugar until light and fluffy. Add the eggs and mix well.
- Whisk together the flour, baking soda, and salt; combine with the butter mixture.
- Add the sour cream, bananas, and vanilla; stir well.
- Pour into prepared pans and bake for 50-55 minutes.
- Cool for 10 minutes and then turn the loaf out onto a rack.

I’ve tried many different recipes. It’s amazing how they play with changing amounts of the basic ingredients. This is by far, hands above any other, my absolute favorite recipe. Moist, not too sweet, oh my. I still get calls from friends asking if I have time to make them some. My favorite thing to gift to others.
Wonderful recipe. My 3 year old grandson devoured it. I made exactly like it sad . But I added chopped pecans . A half a cup. Delish.

I have made this twice now, once exactly as written and once using 1/2 brown sugar and 1/2 white sugar with pan toasted walnuts ( just tryin different things) The recipe as written is amazing and sooooo moist! Thanks for the excellent recipe. The banana bread is indeed very moist. I reduced the sugar by half (used brown sugar because I have lots) and it could be reduced even more. Ripe bananas are very sweet.

I made this recipe and it was easy and delicious!
I added 3/4 C of chopped pecans and tossed some cinnamon sugar that I had left over from pecan buns on top and it added a nice little extra crunch.
Made this recipe tonight and loved it! I did use half the sugar called for and went with cake flour since I was trying to use it up. Added in a few mini chocolate chips in place of some of the walnuts. Very moist and tasty! :)

This recipe was excellent. I added a touch of vanilla and a sprinkle of cinnamon because that’s how I like mine. A streusel on top was always a family favourite. 4 tbsp brown sugar, 1/2 tsp cinnamon, 1 tbsp flour, 2 tbsp butter. Mix together to make a crumb and sprinkle on top of loaf before baking.

I’ve tried a lot of banana bread recipes over the years, and this one is by far the best. Quick and easy to put together and it turns out great every time. I had to bake it a bit longer than it called for to get it completely done, but then, it barely has time to cool before it is gone!
Excellent recipe! Making 3rd batch in 2 weeks right now. First time was 3 mini loaves; 2nd was one half loaf with butterscotch chips & one half loaf with chocolate chips; and current “loaf” is baking in a round pie tin (all that was available) with 1/2 brown sugar and 1/2 granulated sugar and chocolate chips. This is our new favorite banana bread recipe because it has great banana flavor, a tender crumb, but isn’t overly dense.
How long to bake for the small loafs?
Soooooo good! I added 2 extra really ripe bananas and homemade yogurt in place of sour cream… reduced sugar by half! Will make again!!
