Nope, no need to refrigerate the Banana Bread, but it’s best if you you can keep it in an airtight container in a cool place. We also wrap the bread in plastic wrap, then a layer of foil, and we freeze the bread.

How to bake banana bread
I love to make this recipe in my favorite ceramic loaf pan. I slice it warm with this serrated knife and add a hunk of butter.
How to bake banana bread to perfection really depends on the size of your pan. You can bake this recipe in 1 loaf (which will take longer) or smaller loaves (which take less time).
Always check the bread in the middle with a toothpick to see if the loaf is done baking, before removing from the oven.
If the batter sticks to the toothpick, bake a little longer.
Sour Cream Banana Bread
Everyone loves it — perfect for a snack, to give away to a friend, neighbor, or teacher, to send in a care package, whip out of the freezer and serve for out-of-town guests at breakfast.

Sour Cream Banana Bread
Ingredients
- ½ cup (1 stick butter) butter, softened
- 1 cup sugar
- 2 eggs, beaten
- 1 ½ cups flour
- 1 tsp. baking soda
- ½ tsp. salt
- 1 cup mashed bananas, about 3
- ½ cup sour cream
- 1 tsp. vanilla
- 1 cup walnuts, chopped (optional)
Equipment
- 9-inch loaf pan (I like this ceramic one from Good Cook)
- Large bowl (These glass bowls are so handy for baking)
- Hand mixer (I like that this Cuisinart mixer has 5 speeds)
Instructions
- Preheat oven to 350 degrees. Grease and flour one 9-inch loaf pan (or 3 small ones). Pan should be 3/4 full of batter.
- In a large bowl, cream the butter with sugar until light and fluffy. Add the eggs and mix well.
- Whisk together the flour, baking soda, and salt; combine with the butter mixture.
- Add the sour cream, bananas, and vanilla; stir well.
- Pour into prepared pans and bake for 50-55 minutes.
- Cool for 10 minutes and then turn the loaf out onto a rack.

So yummy and easy to make. It’s 7am on a Sunday morning and I’m about to make it again. Recipe calls for ingredients most people already have in their home.
I made this banana bread a lot of times, i just added dark chocolate chip and some walnuts. In this recipe I make 4 mini loaf. The first time I made this I use a big loaf pan but the center part its kinda wet, so the second time I made it I use 4 mini loaf pan to get the best result! Its super moist and delicious. It’s the best banana bread ive ever tasted!
Can this be done with gluten free flour blend like Cup 4 cup or other brand? Anyone tried it?
This is my go to banana bread recipie now and I had some good ones before this one. I like to use 1/2 c regular sugar and 1/2 c light brown sugar. Come out super moist and delicious everytime!

I’ve been making this Banana Bread recipe for 30 years. I love the taste and the texture. It is so moist and stays moist several days at room temperature. I have given so many away to others and they love it too. It’s the best recipe (for me) that I’ve ever found.
Always the best banana bread..I double the recipe to share with friends and they always are surprised by how moist this bread is. I add a pinch of cinnamon to the batter, and do one load with pecans and one with walnuts.
I have made this recipe several times and this last time I played around and substituted ff greek yogurt for the sour cream, split the flour; half all purpose and half 100% wheat and upped the vanilla to 1 Tbsp and the sugar (I like it sweet!). I’ve gotten rave reviews and people always ask for the recipe after trying it. :)

I’ve been doubling this recipe and making it into muffins. My kids love a few chocolate chips added in. Approx baking time 17-20 min for muffins (20 if you make into 24 muffins).

This turned out delicious! In my oven and glass loaf pan it took an additional 10 minutes to bake. I added: 1 tsp cinnamon, 1/8 tsp nutmeg, 1/3 cup crushed walnuts and 1/3 cup chocolate chips.
Turned out so moist and not heavy as my usual banana loaf.

This is my favorite banana bread recipe! I tried others, but this was the flavor I was looking for! The last loaf I made, I used “light sour cream” and you cannot tell the difference. I have this recipe taped to my fridge, so I NEVER lose it!

The taste is wonderful. I substituted 1 cup of flour with almond flour and 1/2 cup bread flour. Greek yogurt for the sour cream and 1/2 cup of truvia for 1 cup sugar. The only problem I have is the middle isn’t cook enough. It was in the oven for 60 mins. Not sure what to do now

We all loved it! So moist! We finished 1 loaf in 1 sitting. I put 1& 3/4 cup mashed banana, I used 3/4 c brown sugar and substituted yogurt for the sour cream.
