Galletas with Strawberries and Mascarpone Cheese
Simple appetizer or dessert: Galletas with Strawberries and Mascarpone Cheese!
Happy Monday and Cinco de Mayo, Friends! The other night on our back patio, it was so gorgeous, breezy, and perfect. Not many moments in life are “perfect” but seriously, we tried to seize the moment and squeeze every last hour into this warm springtime evening. For dessert I whipped up a platter of Galletas with Strawberries and Mascarpone Cheese.
We don’t usually have dessert every evening with our meal, and just coming home from “dollar taco night” at a local authentic Mexican restaurant, dessert was not on the menu. :)
Until I remembered that I had stashed in our pantry a package of Morelianas (Galletas) cookies.
Having in hand these 3 key ingredients for this delicious dessert combination, I quickly went inside and grabbed a platter and lined it with fresh berries, opened a container of Mascarpone cheese, and pulled out a package of Mexican cookies.
Which, by the way, for Cinco de Mayo today, maybe you don’t have special plans, but I’m telling you, this easy combination makes the perfect dessert. If you’ve been invited to a party, this could make you the star!
We broke the cookies into pieces, spread the Mascarpone cheese on top, used my KitchenAid egg slicer to slice the strawberries, and placed the slices on top.
We indulged.
Yes, we did.
We thought about dusting the top with powdered sugar, coconut sugar, or even cocoa. But then we realized we did not need the extra flavors.
But every bite was worth it. And wonderful. And would I do it again? Yes.

Galletas with Strawberries and Mascarpone Cheese
Ingredients
- 2 packages, 3.5 oz Morelianas Calletas (cookies)
- 1 package strawberries
- 1 8 oz. container Mascarpone cheese
Instructions
- Break the cookies into large pieces.
- Open the Mascarpone and place on a platter with a small knife. Layer the cookies by the cheese.
- Wash strawberries and slice (using an egg slicer or a knife).
- On the other side of the platter, layer the strawberry slices.
- Spread the cheese onto the cookies, placing slices of strawberries on top. Serve.
