Friends, here’s a super easy appetizer to serve at a party, or bring as a potluck dish! Stuffed Mini Bell Peppers with Olives is a big party hit!
Maybe you’ve already watched my video or made my delicious Tasty Taco Mini Stuffed Peppers (good enough to be a meal!), but this recipe today is SUPER EASY, only taking about 10 minutes to assemble!

If bringing to a party, make ahead, but save the baking for when you get to the party home!
If serving in your own home, we’ve had these hot out of the oven, and also at a cooled temp. Both are delicious!
Shoes or no shoes rule?
So here’s a question for my reluctant entertainers. :)
First of all, we do not have a no-shoe rule in our home. So we’re easy, come on in … take your shoes off if you want, but don’t feel like you have to. We’ve always been that way.
The last thing I want to do is make my guests take their shoes off when they didn’t come prepared (with their own slippers or socks).
Or even if I did have a basket of socks by the door, maybe they really do not want to take their shoes off.
Here’s a “sock” tip:
I always appreciate when a host gives a head’s up in advance, so that people can come prepared. If I know, I’ll throw in a pair of socks.
Or, what if you’re grossed out by bare feet in your house? Another reason to not enforce the rule, but let people be free to do what they want!

For this recipe today, you will need these ingredients:
Goat cheese (we use garlic and herb flavor), olive oil, green onion, kalamata olives, lemon, and mini peppers!

Stuffed Mini Bell Peppers with Olives
Ingredients
- 4 oz soft goat cheese, garlic and herb
- 24 kalamata olives, pitted and chopped
- 1 tsp olive oil
- 1 green onion, finely chopped
- 1 lemon, zest
- 2 tsp fresh lemon juice
- 12 mini peppers, halved and cut lengthwise (remove seeds)
Instructions
- Preheat oven to 350 degrees. On a cookie sheet, lay down the mini pepper halves, cut sides up.
- In a small bowl, add all the ingredients (goat cheese, olives, olive oil, green onion, lemon juice and zest).
- Mix together until well combined.
- Fill each pepper half with the cheese mixture. Bake for 17-19 minutes, until the peppers are soft. Serve warm!
This is delicious and easy to make. My buddies raved about my culinary talents and gobbled up every last one of these peppers. I had a bit of leftover filling. So I diced up a couple slices of pepperoni and put it on a bed of lettuce for a personal salad. Yummy!

I think this sock thing is good to bring up not a huge deal but it’s a part of hospitality. Good idea as a host to give your guests a heads up on this. Since we live in NH you pretty much always have to take your shoes off mud, rain or snow is almost always going on here but it’s almost a given when you walk in to slip your shoes off. Some folks bring their own slippers or house shoes with them which is great. I know in some cultures such as Hawaiian it’s a custom to take your shoes off as soon as you come in.
