Summer Cucumber Bites on a Stick
Your friends are seriously going to love them. Serve them as an appetizer with this Summer Quinoa and Veggies Salad and these Savory Turkey Burgers! The perfect summer meal.
You can easily make these the night or the morning before your party, then just keep them chilled. Leftovers will keep for a couple of days in the fridge. Just be sure not to drizzle the balsamic glaze on top until serving to keep them freshest.
All you need for this recipe are these ingredients:
- Mozzarella balls
- Fresh blackberries, cherries, blueberries, and strawberries
- Basil leaves
- Cucumber chunks
- Toothpicks
- Olive oil
- Balsamic vinegar
- Salt
There’s something about food served on sticks that people seem to instantly love. Case in point, the antipasto skewers I shared last year were one of your runaway favorite posts of the year! (And, guys, they’re so darn tasty!)
Mozzarella balls on skewers
I opted to pick up fresh mozzarella balls that were marinated and seasoned, but I would suggest tossing yours in a bit of olive oil with a pinch of Italian seasoning if you can’t find those that are already pre-seasoned. We also used English cucumbers with the skin left on for that extra crunch.
Don’t forget the oil, balsamic vinegar, and salt to barely drizzle over the top!
In a holding pattern?

Ingredients
- 16 mozzarella balls
- 16 blackberries, cherries, blueberries, and strawberries
- 16 basil leaves
- 16 cucumber slices, about 3/4’’
- 16 toothpicks
- Olive oil
- Balsamic vinegar
- Salt
Instructions
- Stack the blueberry, cucumber, basil, mozzarella, and berry; skewer with a toothpick. Repeat until all 16 are made.
- Serve with a drizzle of olive oil, balsamic, and a pinch of salt.
