This past weekend was so beautiful in Oregon, but one of my favorite things was talking to my daughter at college on Sunday! It was Abby’s 21st birthday!
It’s hard to believe that 21 years have come and gone, and 20 of those years my mom has been gone. Abby was a bright spot in her life when mom had cancer. What baby wouldn’t make a person smile? (big smile).
It seems like yesterday, we were eating Buttermilk Cake with Maple Bacon Glaze for her 18th birthday!
Abby celebrated with her friends, and we’ll celebrate next time we are together as a family!

I love it when she sends me recipes that she is making in college. This time it was Turmeric Cauliflower Broccoli Chicken dish, a delicious meal for a cool fall dinner!
This recipe serves 2, but of course you can always double or triple the recipe!
PS. How lucky her roommates are this year :)
Get the veggies ready.
Cut the chicken in half (for quick, easy baking).
Bake and serve – a sheet pan dinner!
Oh, and it’s perfect for lunch meal prep during the week, which Abby does for college!

Turmeric Cauliflower Broccoli Chicken

Instructions
- Preheat oven to 450 degrees.
- In large bowl, combine cauliflower and broccoli. Drizzle oil evenly and toss. Sprinkle on turmeric, cumin, and garlic. Toss until evenly coated.
- Take chicken breast and cut in half, lengthwise. Tenderize chicken before sprinkling salt, pepper, turmeric, and garlic powder on each side.
- On large baking sheet, spread out florets, giving them plenty of space to cook. Season with salt and pepper before placing in the oven. Cook for 20-24 minutes, flipping florets once or twice.
- Reduce oven heat to 400. Place seasoned chicken on baking sheet and cook for 10-12 minutes.
- When fully cooked, remove from oven. Sprinkle with cilantro and enjoy on top of your favorite grain or bed of greens.

Happy Birthday to your girl. What a yummy sounding recipe too. I might have to try it. I’m thinking of asking for an instant pot for Christmas…lol. I know a lot of people who use them and love them.
