Spring is here in Oregon. At least in my front and back yards, we’ve already begun gardening and mowing and planting flowers. It’s my favorite time of year, and it’s hard to believe summer is less than 100 days away!
So when Tyson Foods asked me to team up with their Tyson® Grilled and Ready® brand to participate in a Countdown to a Better You program, I jumped on board. I’m already disciplined with a workout plan of weights and cardio 3x a week, and then running the other 2 days, but any kind of NEW accountability helps! Recipe: Chicken Avocado and Pear Wraps {ReluctantEntertainer.com}

Ingredients
- 6 ounces Tyson® Grilled & Ready® Fully Cooked Refrigerated Grilled Chicken Breast Strips
- 2 large whole wheat tortillas
- 1/2 cup cream cheese
- 1 shallot, finely chopped
- 1 avocado, peeled, pitted and julienned
- 1 small pear, julienned
- 1/4 cup walnuts, coarsely chopped
Instructions
- Prepare Grilled & Ready® Chicken Breast Strips according to package directions.
- Spread each tortilla with cream cheese to within 1/2 inch of edges. Sprinkle evenly with chopped shallot.
- Arrange chicken in a line across center of tortilla; top with avocado and pear slices. Sprinkle walnuts over top.
- Roll up and tuck in the ends. Wrap in plastic wrap and refrigerate until ready to serve.

This looks wonderful! I love the convenience of those chicken strips.
sounds yummy! When I take time to think about it, I’ll make sure I have some chicken tenders cooked and cut up and some brown rice made, then we can just put those on a wrap with avocado and peppers and spinach and a few seasonings. YUM! My hubby and oldest just like veggies on their wraps. I’m not very good at thinking ahead though to cut up veggies so they’re ready to throw on a wrap. Oh well :)
