Whipped Ricotta Lemon Dip

Gathering in the summer may be the simplest of all times to gather. Serving a Whipped Ricotta Lemon Dip is an appetizer that everyone loves, with veggies and crackers!
Whipped Ricotta Lemon Dip
It’s super easy to make. You first pour the heavy cream into a bowl and whip with an electric mixer until soft peaks form. You may have already tried my popular summer appetizer: Ricotta Lemon Basil Honey Bruschetta (so good). Maybe you’re branching out and serving my Naan Tri Tip Summer Garden Board!
Then you add in the ricotta, citrus juice and zest, salt, and pepper, and continue to whip until smooth.
What a delight!
Next, gently fold in the corn, feta, green onion, and mint using a spatula.
Pretty presentations are all about the garnish. Save some herbs and feta to add on top right before serving!

Summer is my favorite time to host
Though the prep is easy, and the kitchen can get quite warm at times during the summer months. Most homes do not have A/C here in central Oregon because we’re in the high desert. I find that the evenings that are warm are well worth the effort of sweating to bring it all together.
As the guests arrive, it’s all about the apps! I mean, who doesn’t love a fresh, summer appetizer?
We push past the silly thoughts and feelings and we embrace the whole point of entertaining … to welcome our guests with a full heart of love (mixed together with some really good food).
Ingredients to make Whipped Ricotta Lemon Dip
Ricotta Cheese, whipping cream, citrus like lemon (but you can also use lime), fresh herbs (mint or cilantro), and green onion.
Then you add in corn and feta cheese!
How to serve Whipped Ricotta Lemon Dip
On a beautiful charcuterie or serving board, place the bowl of dip.
Then arrange around it endive, radicchio, your favorite crackers, and veggies (whatever is in season).

Ingredients
- 1/2 cup ricotta cheese
- 1/2 lemon, zested and juiced
- 1/4 cup chopped mint or cilantro, or both, loosely packed
- 1/4 cup green onion, finely chopped
- 1/4 cup fresh corn, cooked and cut off the cob
- 1/4 cup feta crumbles
- 2 Tbsp. heavy cream
- 1 tsp. salt
- 1 tsp. ground pepper

- crackers
- carrots
- baby bell peppers
- radishes
- cucumber
- crackers
Instructions
- In a medium mixing bowl, pour in your heavy cream and whip with an electric mixer until soft peaks form.
- Next add in the ricotta, citrus juice and zest, salt, and pepper, and continue to whip until smooth.
- Gently fold in the corn, feta, green onion, and mint using a spatula—save some herbs and feta to garnish if desired.
- Serve with toasted bread, crackers, and veggies.
