Friends, our daughter is home from college. We couldn’t be happier. Having our family home together for a summer is a real treat, a gift I don’t ever take lightly!
The first thing we did to celebrate was we made cookies! Well, Abby made her specialty, Whole Grain Double Chocolate Brownie Cookies. Yesterday we sat on the deck in the early morning enjoying our coffee.

Home sweet home, where the aspens are quaking, we’ve been entertaining on our deck, making fresh summer salads, barbecuing, and getting to know new friends.
I found this up the street at a local store, and fell in love with it.
The sun is so beautiful right now, and I loved seeing Abby out on the deck (my sunshine) in the morning with her coffee. I always knew that the independence that we instilled in Abby would someday take her away from me.
So when she’s home, it just feels good, and my love cup is full!

These cookies!! Great for that chocolate fix!
Remember that you can always substitute butter for avocado oil, dairy milk for coconut beverage, and brown sugar for coconut sugar, if you don’t have any in your pantry.
Double the chocolate chunks (I buy at Trader Joe’s) if you love chocolate.
Possibly double the batch and freeze!?

Whole Grain Double Chocolate Brownie Cookies
Ingredients
- 1 1/3 cups whole wheat flour
- 1/2 cup cocoa powder
- 1 tsp. salt
- 1/2 cup avocado oil
- 1/3 cup brown sugar
- 1/4 cup coconut sugar
- 1 tsp. vanilla
- 2 eggs
- 3 Tbsp. coconut milk beverage
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 cup large baking chocolate chunks
Instructions
- Preheat oven to 350 degrees.
- In mixer bowl, combine oil, egg, vanilla, and milk. Mix and set aside.
- In separate bowl, combine dry ingredients—flour, cocoa powder, salt, brown sugar, baking soda, baking powder. Mix together.
- Add dry mix to wet mixture; mix well.
- Roll cookie dough into 2 inch balls.
- Place the balls of dough on a parchment-lined pan; bake for 8-12 minutes.
