This is a banana bread of love. I say this, because as the days get longer and weirder and a bit lonelier (I must say, even though we are all home together), we’re eating a few more baked goods. And it seems a lot of love always goes into baked goods, right?

How to make moist banana cake

This cake is deliciously nutty and rich, because of the whole grain and spelt flours.

Ripe bananas not only make your bread sweet, but if you use enough, also very moist.

Use one whole banana for a beautiful garnish on top of the bread.

It will also make your home smell like HEAVEN.

Ingredients for Whole Wheat Banana Bread

  • Ripe bananas
  • Buttermilk and eggs
  • Baking powder, soda, spelt flour, and whole wheat flour
  • Dark brown sugar, white sugar
  • Butter
  • Kosher salt and cinnamon
  • Vanilla

The need for connection

As I step back from the kitchen, and baking and food altogether, I find I’m a stranger here.

I’m completely out of step with this quarantine rhythm and place that we are in.

It’s a strange time, but one thing we’re connected to is our phones … texting, calling, FaceTiming. The need for connection is real.

I think of Thoreau’s words:

“To affect the quality of the day, that is the highest of arts. Every man is tasked to make his life, even in its details, worthy of the contemplation of his most elevated and critical hour.” – Henry David Thoreau

So convicted, naturally, I head to the kitchen and start baking.

Baking and cooking ease me back into the rhythm of nourishment and gratitude.

How to eat Whole Wheat Banana Cake

Eat this for a snack! Slice and toast with butter or peanut butter.

Cut into squares and serve with whipped cream!

Enjoy with cream cheese frosting for a dessert!

Whole Wheat Banana Cake

  • Preheat oven to 350 degrees. Grease the edges of an 8X8 cake pan (or similar sized pan) with butter, then line with parchment so it hangs over the edges.
  • In a large bowl, combine the whole grain flour, spelt flour, baking soda and powder, salt, cinnamon, brown sugar, and white sugar. Whisk to combine.
  • In a standup mixer or with an electric mixer, combine eggs and buttermilk, then stream in the melted butter. Add the vanilla and bananas and mix until smooth. On a medium speed, add in the dry mixture about 1/4 cup at a time until the batter is smooth, stopping as soon as the dry ingredients are incorporated. Do not over-mix.
  • Transfer to the cake pan and smooth the top.
  • Optional: Cut the whole banana in half and sprinkle with remaining 2 Tbsp of sugar. Arrange on top of the batter.
  • Place the pan on the center rack and bake 350 for 50-60 minutes, or until a cake center is firm and a tester inserted in the middle comes out clean.
  • Remove from oven and allow to cool for at least an hour before serving.
