We’re so happy it’s zucchini season! Since we’re having fun with our spiralizer, creating all kinds of zucchini recipes, I thought I’d also share one of our family’s favorite snacks: Zucchini Relish Tuna Salad Dip.
We do enjoy this often as an easy Sunday afternoon snack, but you can also munch on this Zucchini Relish Tuna Salad Dip for lunch, make a cheesy tuna melt, or even put it on top of a fresh green salad.

Summer Wheatgrass Centerpiece
This past week I was getting groceries, and in the produce section the wheat grass caught my eye. I was reminded how simple it is to make a $5 summer centerpiece using wheatgrass.
With little effort, and very little money, you can have a warm tabletop ready for last minute company!
I love it when I go to set a table and I can grab something that’s all ready to go, instead of scrambling around to create a tabletop.
Find your favorite container, and make sure it’s lined. Or, you can keep the wheat grass in its plastic box, if it fits right into the vessel.
I actually pulled them out, and planted them right in the box.

Zucchini Relish Tuna Salad Dip
Ingredients
- 2 cans tuna
- 4 boiled eggs, cut into small chunks
- 1/2 cup Greek yogurt
- Salt and pepper to taste
- Sweet pickles, finely chopped
- Zucchini relish
Instructions
- In a small boil mix together the tuna, boiled eggs, Greek yogurt, and salt and pepper. Add in chopped sweet pickles.
- Serve zucchini relish on top, on the side, or mixed in with the tuna. Serve with pita crackers.
That wheatgrass is a great idea, along the recipe. It’s so easy and a great dish for any meal.
