I’d say almost everyone has summer memories as kids, eating fruit off the vine, munching on a big piece of watermelon, picking berries and popping them in our mouths as fast as we’ve picked them. No matter where we’ve grown up, fruit has been an important part of our summers!

Thinking back on our Africa trip, many of our breakfasts included bananas and fresh fruit. I actually think breakfast was my favorite meal of the day. We ate huge breakfasts because we often didn’t eat lunch until late afternoon. Every day was different, with a different kind of fruit, except bananas were served pretty much at every meal.

Coming home to peach season was a happy moment for me. Our family loves fresh peaches, and they don’t stay on the counter very long.

My son and I canned quite a few, we’ve enjoyed peach ice cream, peach cobbler, and last night I made this tart-yet-sweet Peach Blueberry Crisp!

Blueberries add a whole new element to a crisp. Their plump, firm, fresh, luscious flavor tastes even better when they come from your own garden. We have about 5 blueberry plants.

Blueberries hold up well in the fridge, and with their sweet, tart taste, they’re perfect for a cobbler or crisp.

Combined with peaches?

Add a scoop of vanilla ice cream?

And a cookie dough crisp topping?

Speaking of memories, I recently read this and loved the warmth of Jack London’s words:

“I shall never forget the first time I saw blueberries served on the table,” American author Jack London wrote in 1906. “I had never seen blueberries before, and yet, at the sight of them, there leaped up in my mind memories of dreams wherein I had wandered through swampy land eating my fill of them. The buttery, cookielike topping makes this recipe fantastic. No sugar added in the fruit so you get a sweet, tart combination.

Ingredients
 

  • 4 fresh peaches, peeled, pitted, and cut into large chunks
  • 1 cup fresh blueberries
  • 1/2 teaspoon almond extract
  • 1/4 cup whole-wheat flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 4 teaspoons butter
  • 1 Tablespoon honey
  • 1 teaspoon cinnamon
  • 1/2 tsp. salt
  • Ice cream, optional

Instructions
 

  • Heat oven to 375°. Coat four 4-oz ramekins with cooking spray.
  • Combine blueberries and peaches in a bowl; add the almond extract and lightly mix.
  • In a separate bowl, melt the butter. Combine remaining ingredients and stir by hand until moist and crumbly.
  • Spoon fruit mixture into ramekins; sprinkle the crumb mixture evenly over the top of each.
  • Bake 20-25 minutes or until fruit bubbles and top is golden brown.
