When we go camping, we love to make these packets up ahead of time. Making ahead a delicious dinner that you can bring with you, and then cook on the beach, is the best! Ingredients for Vegetable Sausage Foil Pack Dinner
Let’s get started with ingredients for this foil pack meal:
- Sweet potatoes
- Asparagus
- Sausage links
- Red onion
- Yellow or orange pepper
- Zucchini
- Kosher salt + pepper
- Olive oil
- Tin foil (we use heavy duty)
Tips and substitutions:
- Substitute the sausage for cooked chicken chunks (rotisserie chicken).
- Change up the veggies with small red potatoes, broccoli, and cooked carrots.
- Mix and match summer fresh herbs.
- Use different cheese on top, instead of Parmesan.
- Add more seasoning if you desire!

This post is from a few years ago when we camped at Pacific City, OR. Our favorite bean on the Oregon coast, we brought along this foil pack dinner to put on the fire. The perfect camping dinner.
On Pacific City beach, you get to drive down to the sand. So we pretend we’re in California! But truly, this part of the Oregon beach is spectacular.
We love our French press in the morning.
Fold up our bedding and pack up the car.
And drive back down to the beach.
Pop the top.
Take a nap.
Read, enjoy the sun.

How do you make a foil pack meal?
I prepared the easiest campfire food ahead of time. You have the option of making these packs Vegetarian or not.
- Cut 4 sheets of heavy-duty foil into 16-inch squares and place on flat work surface.
- Prepare veggies: Microwave the sweet potato first. Cut into 2-inch pieces, leaving the skin on. Cut the other veggies into pieces; place in a bowl and cover with plastic wrap (with 2 Tbsp. water) and steam for a few more minutes.
- Cut the sausage into pieces and sauté until lightly brown on each side.
- Divide the meat and veggies into 2 pieces of foil; salt and pepper the ingredients and drizzle with olive oil. For each pouch, bring 2 opposite sides of foil together across the middle, and fold to make a seam 1 inch wide. Do on the opposite end to seal the pouch securely.
- In a fire pit, build a wood fire about as wide as the cooking grate. Let it burn to low flames and embers.
- Set bundles on grill and cook, turning over with tongs every 10 minutes, until vegetables are tender, about 30 minutes (to check, open with a knife).
- Protecting hands with grilling gloves, open pouches and garnish with fresh herbs and Parmesan cheese.

I love your recipes/plans. In fact, tomorrow night we are using your cobb salad board idea for a party for 25+ gals. It will not be a board, but more of a bar.
I love foil packet meals and had kind of forgotten them. At my house, I no longer have a grill. My husband bought me a big new fancy Blackstone. Can I do foil packet meals on the blackstone?

YUM. I have done foil packs before and love them. I’m a huge fan of prepping things ahead for any vacation that requires me to bring food. Even if we are going to sunriver, I’ll make things like spaghetti sauce ahead of time or taco meat, just to make things a little easier. So if we were a camping family I’m sure foil packs would be on the list and I would be prepping…
