
After a fun-filled weekend with our son home from college, and after getting to bed late every night, on Sunday, when the house was so quiet, I pulled out my slow cooker.
Within about 3 minutes I had one of our family-favorite breakfasts cooking.
I’m sure there are many varieties with different fruits and nuts, but this seems to be our family favorite.

Slow Cooker Banana Walnut Oatmeal
(serves 8-10)6 cups soy milk or skim milk
4 cups old fashioned oats
4 bananas, sliced
3/4 cup chopped walnuts
6 Tbs. brown sugar (I used Agave)
2 tsp. cinnamon
1/2 tsp. salt
Vanilla yogurt (optional)
In medium sized slow cooker, combine milk, oats, bananas, walnuts, sugar (or Agave), cinnamon and salt.
Cook on LOW for 1-2 hours, or MEDIUM-HI for 1 hour. Stir occasionally, or until desired consistency.
You can serve it with yogurt, and you can also serve it with fresh berries on top.


Amazing breakfast for a family with teenagers. In fact, when my son had 4 of his teen friends spend the night a few weeks ago, I got a pot of this going in the slow cooker so it was ready to eat when they woke up.
Fast and easy. Healthy and filling.
