Prawns Mango Avocado Salad
This salad is fresh and light and lovely! It’s a dish you’d eat for lunch or dinner, served with a slice of hot, crunchy bread. Oh, so good.
This recipe is so easy, anyone can make it! :)
The California avocados are our favorite! We could eat them at any meal.
Ingredients for Avocado salad with prawns and mango:
- Prawns
- Mango
- Avocados
- White wine
- Salt and pepper
- Mixed salad greens
- Cilantro
- Lime
Best Lime Dressing:
- Avocado oil
- Apple cider vinegar
- Lime
- Honey
- Smoked paprika
- Chili powder
- Cilantro
- Kosher salt

Celebrating spring always makes reminds me of the many spring breaks we had with our kids! Whether in the high desert in central Oregon, or the desert down in the Palm Springs area, we always had a good time with the kids.
The gesture of celebrating spring by giving a gift of nature is a wonderful tradition, as we often did outdoor activities with the family.
Now years later, we had such a great time in the desert this past month. One of the places we splurged and enjoyed with our daughter is FARM restaurant. It’s in downtown Palm Springs, and let’s just say it’s a real treat. Probably the best meal we had while down here. We also started editing the new cookbook on this day!
How to make a prawns salad
Cook the prawns ahead of time and chill. The sweet lime dressing has a “kick” that adds the perfect flavors to the salad.
- Simmer the prawns in white wine; drain and cool.
- Make the dressing.
- Prepare the avocado with fresh lime (to prevent from browning).
- On a bed of lettuce (on a board or a large plate), arrange the prawns, avocado, and mango.
- Drizzle with the delightful dressing and serve!

Prawns Mango Avocado Salad
Ingredients
- ½ lb. prawns
- 1 mango, cubed
- 2 avocados, cubed
- ½ cup white wine
- Salt and pepper to taste
- Mixed salad greens
- Cilantro, chopped, to garnish
- fresh lime
- Dressing:
- ¼ cup avocado oil
- ¼ cup apple cider vinegar
- ½ a lime, juiced
- 2 Tbsps. honey
- Pinch smoked paprika
- Pinch of chili powder
- ¼ cup fresh cilantro, chopped
- kosher salt
Instructions
- In medium sauce pan, bring wine to a simmer and add prawns, cooking on mediumm low heat until pink and slightly firm—but not overcooked—about 2-4 minutes. Remove form heat, drain excess liquid, and set aside and allow to cool.
- In small bowl, mix together avocado oil. vinegar, lime juice, honey, paprika, chill powder, cilantro, and salt. Set aside.
- In small bowl, place avocado cubes and squeeze fresh lime juice on top, to prevent bowling. Set aside
- In salad bowl spread greens on bottom and top with prawns, avocado, mangos, salt and pepper to taste, and dressing.

How nice that your daughter is coming home. I recall you sharing with us about her playing the violin. My daughter also played for several years, stopped this year ( 7th grade) and now wants to start back up again. How is your daughter doin with it? Does she still play now that she’s in college?

I think this would be really good with salad shrimp if someone doesn’t like large shrimp. Looks good for a summer BBQ as well.
