Ingredients for Barbecue Chips Encrusted Salmon

  • Salmon
  • Butter
  • Bottle of barbecue sauce
  • Couple bags of barbecue flavor potato chips

Easy Salmon with Barbecue Chips

How to make chip encrusted salmon fillets

  1. Line a 9×13 baking dish with foil.
  2. Pour one bag (5 oz) of crushed potato chips onto the foil.
  3. Combine the barbecue sauce and the melted butter (it’s okay if the butter isn’t all the way melted).
  4. Dip the salmon pieces in the barbecue sauce mixture. Place the salmon on the chips. Pieces will fit tightly next to each other. Cover with the remaining crushed chips.
  5. Cover the pan with foil and bake. Uncover the pan and bake some more, until the fish flakes with a fork.
  6. Let cool for a few minutes before serving.

This lovely recipe, inspired by my Dad’s wife Ginny, is delicious and so easy for anyone to make! Actually, any flavor of potato chips or your favorite brand of barbecue sauce works for this recipe.

It makes a 9×13 pan, but you can always double up the ingredients and whip up 2 pans, and ask your neighbors to bring a potluck salad or side!

Ingredients
 

  • 2 pounds salmon, skin removed and cut into 2 inch squares
  • ¼ cup butter, melted
  • 1 12-14 oz. bottle Barbecue sauce
  • 2 5 oz. bags barbecue flavor potato chips

Instructions
 

  • Preheat oven to 450°.
  • Line a 9×13 baking dish with foil.  Pour one bag (5 oz) of crushed potato chips onto the foil.
  • Combine the barbecue sauce and the melted butter (it’s okay if the butter isn’t all the way melted).
  • Dip the salmon pieces in the barbecue sauce mixture. Place the salmon on the chips. Pieces will fit tightly next to each other. Cover with the remaining crushed chips.
  • Cover the pan with foil and bake for 10 minutes. Uncover the pan and bake for additional 15-20 minutes, until the fish flakes with a fork.
  • Let cool for a few minutes before serving.
