I’ve baked a delicious Easy Salmon with Barbecue Chips recipe that is so easy, you could whip up a pan or two and share it with your neighbors!

Easy Salmon with Barbecue Chips

I was recently asked to work with Kettle Brand to share a recipe using their Kettle Brand Chips, and to share some exciting news with you today. Of course, being passionate about opening our home and inviting others in, I knew this was perfect for me. The reason why this recipe is titled “Easy Salmon,” … well, just take a look at the very simple ingredients involved! (You can use any flavor of barbecue sauce!)

Easy Salmon with Barbecue Chips

Feast on life.

My tag line, feast on life, involves this very thing. People, neighbors, eating together, rich relationships, community at home, intimacy, conversation, investing in the lives of others. It means putting busyness aside and being a good neighbor. It’s all of it put together that helps build community, which is rich, and makes life full.

Community living is a lost art. It starts with our families, in our homes, and in our neighborhoods. I don’t think I’d even be writing about it if technology wasn’t so overwhelming today, because community was never an issue in years past. But Kettle Brand is all about community, and is kicking off its “Hey, Neighbor” program this summer, and I’m happy to tell you more about it today.

Hey, Neighbor!

This new summer program is designed to inspire neighbors to connect, with the ultimate goal of establishing strong communities. And, by the way, Kettle Brand has been committed to strong communities for over 30 years!

Easy Salmon with Barbecue Chips

Get to know your neighbors!

You may be blown away, like we have in our neighborhood, by all the wonderful neighbors with whom we’ve shared food, tools, pet-sitting duties, dinner parties, a cup of sugar, gifts, celebrations, … the list goes on and on.

Easy Salmon with Barbecue Chips

This lovely recipe, inspired by my Dad’s wife Ginny, is delicious when made with Kettle Brand’s Potato Chips, Backyard Barbecue flavor. Doesn’t it sound delicious, just reading those words? Oh, and remember any flavor or brand of barbecue sauce works for this recipe!

Easy Salmon with Barbecue Chips

It makes a 9×13 pan, but you can always double up the ingredients and whip up 2 pans, and ask your neighbors to bring a potluck salad or side!

Of course, in my mind, any salmon recipe is perfect for a summer party!

Do you have any neighbor events or dinners planned this summer?

Friends, I’m writing over at The Art of Simple today, where I’m talking about listening and engaging with your dinner guests. I hope you’ll join me there!

Easy Salmon with Barbecue Chips

I’ve baked a delicious Easy Salmon with Barbecue Chips recipe that is so easy, you could whip up a pan or two and share it with your neighbors!

  • 2 pounds salmon, skin removed and cut into 2 inch squares
  • 1/4 cup butter, melted
  • 1 12-14 oz. bottle Barbecue sauce
  • 2 5 oz. bags Kettle Brand Potato Chips, Backyard Barbecue flavor, crushed

  • Preheat oven to 450°.
  • Line a 9×13 baking dish with foil.  Pour one bag (5 oz) of crushed potato chips onto the foil.
  • Combine the barbecue sauce and the melted butter (it’s okay if the butter isn’t all the way melted).
  • Dip the salmon pieces in the barbecue sauce mixture. Place the salmon on the chips. Pieces will fit tightly next to each other. Cover with the remaining crushed chips.
  • Cover the pan with foil and bake for 10 minutes. Uncover the pan and bake for additional 15-20 minutes, until the fish flakes with a fork.
  • Let cool for a few minutes before serving.
