Breakfast casseroles for breakfast or brunch
Last week we hosted 2 sets of overnight company. My favorite … every morning I made breakfast, we served coffee, and we sat around the table. For hours.
What is it about being fresh in the morning, when life is new and light?
It’s my privilege to think ahead (it takes planning to host out-of-town guests), to plan food for company, whether a delicious dish like today’s recipe, an overnight Ham Breakfast Casserole, or this Overnight Monte Cristo Breakfast Casserole :)
Red Tart Cherries
Today I’m sharing a delicious recipe made with apples and Oregon Fruit’s Red Tart Cherries. Which, by the way, there are many health benefits that align with tart cherries, and cans are available at national retailers, including Walmart.
Oregon Fruit carries many different varieties–Gooseberries, Blueberries, Red Raspberries, Blackberries, Red Sweet Cherries, and more–but my favorite are their Sweet Tart Cherries.

My family looks forward to homemade cinnamon rolls and a yummy spinach and cheese strata for a special holiday breakfast. Not only is it delicious, but all can be prepared the night before!
I like to make Chilaquiles. I make the sauce ahead of time so in the morning they just need to be assembled
This looks delicious! I love making baked French Toast casserole, fruit salad and breakfast Bundt cakes. Pretty easy and so good!
Making a Sausage and Vegetable Breakfast Casserole is my thing during the holidays. I love getting everyone together to have a loud and happy holiday time at my home. It’s wonderful to have the smells permeating throughout of bacon, sausage, coffee and sweets.
I like to make a cheese and sausage strata that I make the day before and then bake in morning. So easy!
This looks absolutely delicious. I will be making this for my grandchildren for next weekend sleepover .
Breakfast casserole because I can make it ahead of time and it feeds a large group. The ingredients vary depending on what I have but usually sausage, onions, peppers, cheese in a savory egg mixture. I would love to have this beautiful pan to make and serve it in.
Angel biscuits…make the dough up to 3 days ahead, roll them out, cut and bake fresh in the morning!
This looks amazing and I love cherries so I am going to have to make this. But what I have made that others love is a spinach leek bacon quiche. I love this and it goes quite quickly in my family. So much so that I usually have to make two. (I come from a large family so no such thing as a small gathering).
Monkey Bread oozing with cinnamon, sugar and butter. I make this every Easter morning and every Christmas morning.
