Baked Bacon Egg Pretzel Rolls
Baked Bacon Egg Pretzel Rolls are stuffed with scrambled eggs, Gruyere cheese, bacon and garnished with avocado, tomato and green onion!
We’re a “breakfast-for-dinner” kind of family. Are you? As long as I can remember, even as a little girl, I loved breakfast food for dinner. So today, baked egg cups are fun for the weekend! You could even serve these on a breakfast board.

Ingredients for Baked Egg Pretzels
I had sitting on my kitchen counter a bag of Costco’s pretzel rolls, thinking how easy it would be to scoop out the center and bake eggs inside. Sure enough, this creates a nice crusty crust on the outside, and creamy egg mixture on the inside. Indeed it was a great idea, because they turned out fabulous! And you can change up the toppings!
- Pretzel rolls
- Eggs
- Heavy cream
- Precooked bacon
- Gruyere cheese
- Green onions
- Salt and pepper
- Avocado
- Cherry tomatoes
How to make Stuffed Pretzel Rolls with Eggs and bacon
We garnished the egg cups with more spring onions, a slice of avocado, and a cherry tomato half!
But first, you cut out the center of a preztel roll and fill with the bacon mixture. TIP: If you want more eggs and less bread, then scoop out more bread and scramble a couple m0re eggs to the recipe!
Then pour in the eggs and bake!
For sure you want to serve these nice and hot, right out of the oven after sitting for only 5 minutes!
Feel free to add sausage or Canadian bacon in place of the bacon!

Baked Bacon Egg Pretzel Rolls
Ingredients
- 12 pretzel rolls
- 6-7 eggs
- 1/2 cup heavy cream
- 6 strips precooked bacon, cooked & crumbled
- 1/2 cup gruyere cheese, grated
- 2 green onions, thinly sliced
- Salt and pepper
- Avocado
- Cherry tomatoes
Instructions
- Preheat oven to 350 degrees F.
- Scoop out the center of each roll, about 1/2 inch to the bottom.
- Beat the eggs and cream in a mixing bowl. Gently whisk in the cheese, bacon, and one green onion. Salt and pepper to taste.
- Cook the precooked bacon in microwave for 1 minute. Cool; break into small pieces.
- Divide the mixture into each roll, placing on a parchment paper-lined baking sheet.
- Bake for 25 minutes or until egg mixture is set in the center.
- Allow to cool for about 2-3 minutes.
- Garnish each roll with remaining avocado slices, tomato, and green onion.
Oh yum. I need to try this….I saw Clinton Kelly do this on The Chew, but with a longer type roll and I thought “that is such a great idea”. I still haven’t tried it, and I LOVE pretzel rolls.Â

These look great. Often I’ll serve a quiche or a loaded pan of scrambled eggs with lots of veggies in it…hubby and I love it. our youngest, not so much. I watched the chew a few months ago and they did something like this but with french bread rolls…I like the idea of pretzel rolls. YUM
