  • Full fat coconut milk: definitely needs to be full fat
  • Maple syrup: you can also use honey
  • Cardamom: we love this spice combined with vanilla!
  • Vanilla
  • Shredded coconut
  • Bananas: better to use bananas that are on the riper side (sweeter)

How do you make banana popsicles?

  1. In a medium bowl, combine the coconut milk, maple syrup, cardamom, vanilla, and shredded coconut. Mix well and allow to sit.
  2. Slice the bananas into disks and place into popsicle molds.
  3. Spoon mixture into 6 popsicle molds and insert a popsicle stick in each mold.
  4. Freeze for 5-6 hours (preferrably overnight).
  5. To easily remove from the mold, run the popsicle mold under warm water for a few seconds, then remove the popsicle.
  6. Serve and enjoy!

How do you unmold the popsicles?

It’s easy.

  1. The secret to unmolding the popsicles is to add heat (warm water, not hot) to the very outer layer of the pops, so that they release from the mold.
  2. Make sure the bowl of water is big enough to fit the entire popsicle mold in when releasing.
  3. You need to do this quickly to not melt the popsicles.
  4. Next, pull the popsicles straight out. If your popsicles still aren’t budging after 30 seconds of soaking, return the mold to the bowl for a bit longer and try it again.

Tips & substitutions:

  • These popsicles require 5-6 hours to freeze.
  • The secret to a perfect banana popsicle is to use ripe bananas. It makes the popsicle sweeter, with more “banana” flavor.
  • Freeze ripened bananas ahead for this recipe, then when you’re ready to make – defrost and follow the recipe.
  • You may use regular or almond milk instead of the coconut milk.
  • If making for breakfast, you can add protein. Use a scoop or two of your favorite flavored protein powder to add taste and nutrition to the mix.
  • Different fruit (e.g. berries). Swap out the bananas for your favorite fruit, like mango, pineapple or blueberries.
  • Add chocolate! If you love chocolate covered bananas, layer some chocolate chips in your popsicle.
  • Add a swirl of your favorite flavor of jam.
  • Also for more protein, add a swirl of your favorite nut butter.

Storage instructions:

Store in the freezer for up to 2 months. You can remove all the popsicles from the mold and freeze, but make sure it’s an airtight container. You can also use Ziplock bags (make sure the air is out of them when you seal the bag).

KEY: Wrap each popsicle individually in clear wrap or wax paper so they don’t stick together.
