Last night, we hosted dear friends we’ve known for many years. It was the first time we were all together in a long time, and truly a delight.
Since we’re all from Oregon, I thought it was only appropriate to end the night with the richest brownie recipe I could find, of course with Oregon hazelnuts, topped with Tillamook Chocolate Mint ice cream.
True Oregonians at heart. The hazelnuts are grown in our Willamette Valley, roasted at Columbia Empire Farms.
Sit awhile
Down by the river, a 4-minute walk from our home, are benches that say, sit awhile.
We pass these benches by on our snowy walks, trying to stay warm, getting into the sunshine.
We’ve so enjoyed our kids all home with us in our snowy, small space. It’s small indeed, but we’ve figured out how to put in the leaves, set the table for 12, and have people in.
Toward the end of the year, a new energy moves in. You can feel it in the air, a resting, listening, searching, a silence in our hearts for what comes next.
A year ago, my husband and I started to tell our friends about our dream to move to central Oregon. It was a dream, with a lot of work ahead to accomplish this goal.
Eight months later, so much has happened in our lives. I’m truly grateful for the hidden treasures of change, quiet, peace, and taking many moments to sit awhile.
BEST Chocolate Hazelnut Brownies
Yesterday I whipped up a batch of the BEST brownies for our guests.
Hazelnuts in the brownies and on top, oh so good.
Hot out of the oven; served with ice cream.
Rich and sweet like our dear friends.
The most wonderful brownies ever!
Makes 24 two inch brownies!

BEST Chocolate Hazelnut Brownies
Ingredients
- 2 1/3 cups semisweet chocolate chips
- 3 sticks butter
- 1-1/2 cups sugar
- 1 cup flour
- 1/2 tsp. salt
- 1-1/2 tsp. baking powder
- 6 eggs
- 1 tbsp. vanilla
- 1 cup milk chocolate chips
- 1 cup chopped Oregon hazelnuts, divided
Instructions
- Preheat oven to 350° F. Grease a 9 X 13″ baking pan.
- In a large microwavable bowl, place semisweet chocolate chips and butter. Cook on high for 2 minutes. Stir mixture with wooden spoon until all of the chips and butter are melted.
- In the bowl of a standing mixer, combine the sugar, flour, salt and baking powder. Stir to mix thoroughly.
- Add the eggs and vanilla to the chocolate mixture, blending well with a wooden spoon.
- Pour this mixture into the bowl with the dry ingredients. Mix on medium speed for 30 seconds, just until ingredients are blended. Stir in the milk chocolate chips and 1/2 cup hazelnuts. Spread into prepared pan. Sprinkle with remaining hazelnuts.
- Bake until the brownie starts to come away from the sides of the pan, about 35 minutes. Cool before cutting to serve.
- Serve with your favorite ice cream!

These brownies were very decadent and delicious! My oven decided to not work properly, so it took me longer to bake, but was well worth the wait!
