Best Flourless Chocolate Cake
Mother’s Day and summer entertaining is here, and this delicious Best Flourless Chocolate Cake recipe is truly the BEST. Serve it with fresh whipped cream and strawberries, an elegant presentation. Adapted from a recipe I’ve made for years, this easy flourless chocolate cake has one extra step that makes it so fluffy.
When I think of my beautiful mother, my heart immediately skips a beat. I loved her so! It helps to have so many lovely pictures, but man do I wish I could see her face again today. It’s been 21 years since she passed away, and it feels like yesterday.

Mom’s death changed us all, but our everyday living didn’t change. We still have the same routines today, similar to 21 years ago. Yes, a lot has happened in 21 years, but our hearts are still tender, and probably the biggest shift for me was my heart grew up.
Yes, my heart changed and grew through my mom’s death. It caused me to have more compassion for others who were dealing with cancer and death, and it made me love and care for people in a much deeper way. My heart grew up.
When I think of cakes and whipped cream and pies and berries and all things sweet, I think of mom.
Best Flourless Chocolate Cake
When I bring a meal to a family, I always try to throw in something sweet. Whether Best Flourless Chocolate Cake or Almond Flour Chocolate Brownies, this cake is also a favorite to bake and give away. It’s gluten-free (made with almond meal, not flour), and you can serve it plain (good enough) or with whipped cream and fresh berries.
How to make a flourless chocolate cake
Bake the cake ahead, or serve it warm. The secret is to whip the egg whites separately, and fold them into the chocolate batter. I’ve made this recipe for years, adpated from a “Flourless Chocolate Cloud Cake.”
Dust the springform pan with cocoa for easy removal.

Harry & David sent me these beautiful strawberries this last week. I’m part of their Fruit of the Month Club, and this was this month’s amazing fruit, delivered to my house.
I wrote on Instagram this week (are you following my Instagram stories?), I really don’t consider myself a baker, but I can make a “mean” flourless chocolate cake. :)
It’s always been one of my favorites, probably because it’s so easy. And so chocolatey good.
Slice these huge berries, and add on top of the cake with fresh whipped cream.
I’m not a detailed baker, by the way. So any way these berries land on the cake is alright by me! :)
I know my mom would have raved about this cake, and would have probably shared the recipe with a few of her friends, or even a neighbor. If mom was here today, my sisters and I would hug her, kiss her, tell her how much we loved her.

Best Flourless Chocolate Cake
Ingredients
- Cooking spray
- 1/4 cup unsweetened cocoa + 2 Tbsp., divided
- 1/2 cup unsalted butter, softened (1 stick)
- 1 tsp. vanilla
- 1 cup sugar
- 1 cup almond meal
- 8 ounces semi sweet chocolate, melted
- 4 eggs, separated
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp. vanilla
- 2 cups strawberries, sliced
Instructions
- Preheat oven to 350F. Coat a 9-inch springform pan with cooking spray and sprinkle the inside with cocoa. Make sure it’s evenly distributed, and turn pan over and shake off excess cocoa.
- Place softened butter in large bowl; beat until smooth. Add vanilla and 1 cup sugar; beat until creamy. Add almond meal, chocolate and egg yolks; beat with a mixer at medium speed; set aside.
- Beat egg whites with a mixer at high speed until soft peaks form (do not overbeat). Stir 1/2 of the egg whites into chocolate mixture; gently fold in the remaining half of egg whites.
- Scrape batter into the prepared springform pan. Bake 35 minutes or until done. Cool 30 minutes, cutting around the outside of the cake to release from the edges. Then release the springform and slide onto a serving plate.
- Meanwhile whip the cream on high until barely thick; add in the powdered sugar and vanilla. Gently mix.
- Top cake with whipping cream and sliced strawberries.

Having lost my Mom and both sisters, I find myself especially blue this year. My kids live in Bend and I still live in California, I celebrate Mother’s Day with a group of friends. We have our special breakfast together. Maybe we need cake this year!
