This Four Cheese Pasta Recipe is a pasta dish baked with four types of cheese and with truffled mushrooms. The specific cheeses can vary, but the most common includes mozzarella, Parmesan cheese, and Romano. We added fontina and ricotta cheese! This pasta is rigatoni, but other popular pastas to use are any short shape, like penne or fussili. It’s an easy pasta bake that is vegetarian and loved by all! I love a good vegetarian pasta dish that is hot and cheesy out of the oven. Especially when it’s served with crunchy garlic bread. For this delicious, comforting pasta recipe–full of stringy cheese–it’s super easy. Combine all 4 cheeses in a bowl! Divide into 2, and follow the directions to get the creamiest, best pasta dish!
Four-Cheese Pasta Recipe
There’s no meat in this dish, but you certainly can add ground beef, chicken, or turkey. But why? When it’s so cheesy-good made with truffled mushrooms! Let me tell you more about this dish!

A vegetarian pasta bake is a hot dish baked with vegetables, cheese, plant-based ingredients, and excludes meat. You always start with a cooked bite size pasta, and then the dish either involves a creamy sauce, or a lot of cheese. If making a sauce it can be tomato-based or cream-based. Sometimes there is a topping, like breadcrumbs on macaroni and cheese, that is baked in the oven.

Ingredients you’ll need to make Four-Cheese Pasta Recipe
- Pasta: Whole wheat pasta (we used Ragatoni) + olive oil
- Dairy: Mozzarella cheese + fontina cheese + Romano cheese + Ricotta cheese + milk
- Pantry: Crushed tomatoes, jar of Truffled Mushrooms (we buy Delallo)
- Veggies: Fresh rosemary and green onions
- Spice: Black pepper and salt

How do you make a Four-Cheese Pasta Bake?
- Cook the pasta: Bring a pot of salted water to a boil and cook pasta until al dente, 10 minutes. Drain the pasta, toss it with olive oil and set aside.
- Preheat the oven to 450°.
- In a large mixing bowl, combine the four cheeses. Remove one half of the cheese and set aside.
- Pour the tomatoes, mushrooms, and milk into the mixing bowl with half the cheese. Season the mixture with salt and pepper and stir to combine. Add the cooked pasta and rosemary and toss.
- Pour the pasta into a shallow 12-inch skillet or baking dish. Sprinkle with the remaining ½ of the cheese and bake until the top is bubbling and golden brown.
- Top with green onions and serve.

Sandy’s tips and substitutions:
- What kind of pasta can you use? Any small bite pasta like penne or fussili, rigatoni, or even large macaroni or bow-tie pasta works.
- Can you swap out the cheese? Yes you can – use your favorite cheese, just make sure they are stringy, and good in flavor (mixe together).
- What do you use in place of DeLallo’s sliced truffled mushrooms? Don’t skimp out on these, but if you have to and need a substitute, there are several options. Porcini mushrooms are known for their rich, nutty flavor, are a popular choice and grow in similar conditions to truffles. Saute these up instead of using jarred.
- You can also use truffle oil, though it’s worth noting that many truffle oils are made with synthetic compounds and may not replicate the true truffle flavor.
- Lastly, we love Trader Joe’s unami seasoning – have you tried it? It’s my favorite and I cook with it all the time.
- Crushed red pepper flakes are totally optional for a nice garnish with the green onions. Use toppings like fresh chopped herbs in season!

Serving
This is the best weeknight dinner served with a green salad, homemade biscuits, and small bite of Carmelitas for dessert. Of course, you can double the recipe if feeding more people, and ask your guests to bring some salads! This is the best “anytime” pasta dish.

This is a great dish to bring to a family who needs dinner. It’s mellow in flavor, for a nursing mom (new baby in the family), or sick loved ones (or the caring family). We love to bring a pasta bake and if the recipients are gluten-free, it’s pretty easy to find gluten-free pasta in most stores now.

Ingredients
- 1 pound whole wheat pasta, we used Ragatorni
- 2 Tbsp extra-virgin olive oil
- 6 ounces fresh mozzarella, cut into cubes
- 6 ounces fontina, grated (about 1 cup)
- ¾ cup fresh ricotta
- 1 cup Romano cheese, grated (or shaved)
- 1 14 oz crushed tomatoes, do not drain
- 1 6 oz jar sliced truffled mushrooms, (we buy DeLallo)
- 1 cup whole milk
- 1 Tbsp finely chopped rosemary
- Kosher salt and freshly ground black pepper
- 1 green onion, thinly sliced
- Crushed red pepper flakes, optional
Instructions

You cook it hot and fast, melts the cheese and sort of a crunchy (on top) pasta taste! So good.
