Butternut Squash Coconut Lobster Soup
Comforting, creamy and delicious Butternut Squash Coconut Lobster Soup for an elegant soup night! Serve with your favorite salad and hot crunchy bread!
Friends, I’m so excited for the season that we’re in. Hosting and cooking in the fall and for holidays is all about bringing people together around the table and sharing great food, drink, and company.
Fall comfort soup
With fall and holidays all about comfort foods, soups, and stews, it’s pretty fun to have one signature dish that knocks the socks off your family or guests.
I don’t mean to impress, I mean to please, with a cozy dish that is so flavorful, you may go back for seconds. Cold weather is the time to indulge. You need more fuel to keep you warm…. :o)
Where to buy lobster for soup
Like this Butternut Squash Coconut Lobster Soup. Funny, it’s robust and elegant at the same time.
I love that it’s made with coconut milk, and who doesn’t love lobster?
A friend was asking me about where to buy lobster. Costco has a 2-pound bag of frozen, ready-to-use Lagostino Lobster Tails. They are shelled, deveined, and you can divide the bag and use for several recipes.
Great for the holidays!
You may have already tried my Easy Lobster Roll Sandwich Recipe or my Mixed Seafood Soup. Both so good! The Mixed Seafood Soup I’ve gotten so many emails from readers, so thanks for letting me know how good it was (I agree!)
Turn your party into a potluck.
Butternut Squash Coconut Lobster Soup
Make this Butternut Squash Coconut Lobster Soup and serve a side salad.
Serve with black rice (Forbidden Rice), which is optional.
Guests can bring bread and wine.
Or, ask guests to bring a dessert that sparks nostalgic fall memories — it could be something store-bought, or a rendition of their grandma’s favorite apple pie.
Enjoying good food, our stories (and memories), with new and old friends around our tables, can create some of the richest conversations.
I’ve never hosted a dinner where I don’t fall into bed at night with thanksgiving in my heart.
Enjoy!

We just made this for dinner using frozen langostino lobster from Costco. We followed the recipe to the T except used soy sauce instead of fish sauce. It was amazing! We will definitely make this again! Thank you for such a wonderful recipe!
I would love to make this! ย I went to Costco (Bend) and looked and looked for the frozen lobster to no avail. ย I asked a guy working in that section and he wasnโt aware they ever carried it. ย Suggestions?
Yes, they have the little lobster tails in freezer by the salmon and fresh fish! I just saw it there … (scallops, lobster, shrimp). Good luck!
Can red curry paste be used instead of the green?? I canโt find the green curry paste abywhere!!!
Yes! Let us know if you tried it and liked it :)
