Friends, what a beautiful holiday season here in snowy central Oregon. We’re so thankful for the friends we were able to see over the holidays, and the many meals shared with our kids!

On the menu for breakfast this week are these Butternut Squash Granola Parfaits, delightful to make ahead and serve in the morning! Are you still hosting out-of-town guests? Serve this healthy breakfast or brunch option with these Sour Cream Bran Muffins – Yum! These days are precious, and even though I didn’t drag all my Christmas stuff out this season (not one box), we had simple Christmasy decorations that made our house feel festive and bright! Thinking about the gift of friendships, we were talking to our kids that we are the only ones who can search out, pray for, and make happen these kind of friendships in life. You and I. That is why I write so much here on RE about the preciousness of inviting, and cooking for others, and sharing a cozy space with people in our lives. It’s truly one of the best things in life. More than gifts and holiday decor.
It’s the people that matter
It’s the people in our lives that matter, and when our eldest recently thanked my husband and me for showing him the gift of hospitality, paving the way, he was relating it to a good investment in life.
I’ve often told our kids: Don’t be satisfied with just letting life happen to you, day in and day out, so caught up in things that don’t bring happiness or joy, so out of control with our busy schedules, that we don’t have time for others.
The bottom line is this: Just make it happen! These delightful breakfast parfaits are easy to make ahead the night before. You can make your own granola, or buy it. We love our homemade grain-free granola recipe (so good!) Refrigerate; drizzle with honey right before serving! Happy Monday, and enjoy the last week of 2016, Friends!

Butternut Squash Granola Parfaits
Ingredients
- 3 cups Greek Yogurt
- 3/4 cup Grain Free Granola, or your favorite granola
- 2 c. butternut squash
- 1 tsp. cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. of nutmeg
- 2 Tbsp. maple syrup
- Pinch of salt
- Honey for drizzling
- 1 Tbsp. almond butter
Instructions
- Peel, core, and cube the butternut squash. Toss together with cinnamon, ground ginger, nutmeg, salt, and melted coconut oil.
- Bake in oven at 400 for 25 minutes. Remove from oven, allow to cool completely and set aside.
- In small glass cups or glasses, evenly divide and layer yogurt, squash, granola, and a small drizzle of honey. Layer for about three layers. Top with a tbsp. of almond butter, a sprinkle of granola, and a few cubes of squash.
- Right before serving, drizzle with honey; serve!
Hmmmm….sounds different, but good. I love a good parfait!
