Friends, for lunch today, we have extra rotisserie chicken and fresh grapes in the fridge, so we’re making this Chicken Kale Salad Recipe, topped with our favorite Green Goddess Dressing. Have you tried Trader Joe’s brand of Green Goddess Dressing in their refrigerated section? OH MY. So fresh, our new favorite.

Years ago, we grew so much kale in our garden, the entire city could have been fed. It’s actually a joke in our family now, when we reminisce about our gardening days, and all the kale chips we devoured.

Walking through the trellis of roses, and past our outdoor dining table, were then 12 garden beds.

My favorite was planning the beds, planting, and then of course the harvest. Toward the end of summer I wasn’t as enthused, because that’s when most of the preserving happens (a lot of work!)

One thing I loved about our garden years was what my husband taught me, of the value of food that emerged like a miracle from the soil.

Gardening also taught our kids a lot about life–the beauty of nature, patience, mistakes in between, like bugs, and not enough water, or waiting too long to harvest. They also helped me can, which was a big time commitment.

How to massage kale

For a few minutes, with your hands, start to tear the leaves apart and begin massaging the kale (similar to kneading bread dough). Continue this process for about 2-5 minutes or until the leaves are softened. The leaves will turn a bright green color.

Two steps first, while you’re massaging the kale and getting it soft, start the roasting process with the butternut squash. Then chop the chicken and set aside (we use easy rotisserie chicken).

Mix everything together and drizzle with a delicious dressing and fresh chopped parsley!

We love Trader Joe’s Green Goddess Dressing, but you can always make your own!

Very easy Chicken Kale Salad Recipe

Chicken Kale Salad Recipe

Ingredients

  • 1 bunch of kale
  • 1/4 c avocado oil
  • 1 c cubed baked (or roasted) butternut squash
  • 1 c grapes sliced into halves
  • 1/4 c red onion coarsely chopped
  • 1 c shredded rotisserie chicken
  • 1 c chopped parsley
  • Green Goddess Dressing Bought from Trader Joe's
  • Salt and pepper to taste

Instructions

  • Remove stems from kale by pulling from the bottom of stem to top of the leaf. Once all stems are removed, chop kale into smaller pieces. Place in large salad bowl and drizzle oil on top.
  • Massage oil and kale together with hands to make leaves tender. Add salt and a few cracks of pepper.
  • Sprinkle parsley, chicken, squash, grapes, and red onion evenly on top. Finally, drizzle with salad dressing and toss.
