I saved a couple inches of room on the top to have enough space for all of my extras!

All you need is coconut meat (we buy at Trader Joe’s in the freezer section), chocolate protein powder, and almond milk.

Add pitted dates for sweetener, almond butter, cinnamon, and then ice!

Friends, I feel summer is officially here. Maybe it’s the spring tease in five straight days of sunshine, but I’ve been out walking with the dogs as much as possible.

Alder and Haggis McStitch

Alder the Whoodle is almost two now, so he’s a big boy and much better behaved. He’s a great dog and stays on our property, is getting better at listening, and is so much fun. He and Haggis McStitch are buddies, even though they are like Mutt and Jeff. Two completely different dogs. Haggis, 15 this year, is very much slowing down.

One thing about whoodles is they get hot. So off to the groomers Alder is going this morning for a fresh summer cut.

The other day I was down by the river, and he was chasing the ball (no one was out, so I had him off the leash for that stretch only). I’m not sure if you saw my instagram @reluctantentertainer , but he will quickly run into the water, and gently lay down in the slew (yuck), to cool off.

I bathed him when we returned to the house, and for my reward for getting the gunk off of him, I made myself a Coconut Almond Butter Mousse Smoothie. Much deserved. HA

The reason why I point out how Alder stays in our yard, is because for 15 years we had a terror terrier (that would be Haggis), who lived his life not so much running away, but meandering away.

He didn’t necessarily chase or bark at people, but he’d just explore, and eventually catch up with runners or people out walking, and latch onto them.

One story, not so funny then, but a great memory now: Haggis was gone. GONE! We all cried our eyes out. We were out searching for him for hours. [Above, Haggis always protecting, Alder the Whoodle as a puppy.]

Then my husband was driving up a street near our house in Medford. There was Haggis with another man and another dog.

Paul got out of the car and said, “Haggis! That’s our dog!”

Haggis completely ignored Paul, as if to say, Here’s my new friend.

Haggis’ response was so mild, that the guy walking him was not convinced that Paul was the owner.

Oh, the life of a Cairn Terrier.

We did get our dog back.

Don’t you love smoothies in the summertime? Head out for a long walk, and come back and treat yourself. Toppings make a smoothie!

I love to sit outside and just savor each bite of pure flavor and joy.

Special toppings include toasted coconut flakes, toasted almonds, almond butter, and fresh summer berries (or you can use frozen). 

Don’t forget a pinch of salt!

Ingredients
 

  • 2 1/2 cups frozen coconut meat
  • 1 serving chocolate protein powder
  • 4 large ice cubes
  • 1 cup almond milk, or milk alternative
  • 1-2 figs or pitted dates, for sweetener
  • 2 Tbsp almond butter
  • 1 tsp cinnamon

Toppings

  • Toasted coconut flakes
  • Toasted almonds
  • Almond butter
  • Frozen or fresh berries
  • Pinch of salt, optional

Instructions
 

  • Combine all ingredients in a high-power blender and blend until smooth. Add additional milk , 1/4 cup at a time, if smoothie has trouble blending.
