Friends, February is the month to cozy up, enjoy a bowl of Creamy Coconut Butternut Squash Soup, and get warm. At least for us this week. We have snow coming off and on all week long!

This butternut squash soup will last 3 to 5 days in the refrigerator. But for our family, leftovers usually don’t last that long. HA.

Does butternut squash soup freeze well?
First of all, butternut squash freezes very well! You can freeze it raw or cooked. Lay on a cookie sheet and freeze first, then place the pieces in a bag or container.
For this soup recipe, I would not freeze it, because of the coconut milk. I just don’t like milk products frozen. If you try freezing this, come back and tell me how it went! :)

Thoughts on February
This is how we’re enjoying our February so far.
- It’s fun in the evening to cozy up to our favorite TV shows. As long as we don’t spend hours doing this, it’s okay to take a mini vacation from the ‘real world’ and enjoy our favorite Netflix shows.
- Wrap up in a fluffy blanket. We have lots of comfy blankets in our living room.
- Enjoy the wood stove. We have a chair we sometimes flip around, and sit by the fire with a cup of tea and favorite book.
- Take a long, relaxing nature walk. We headed out this week in the beautiful snow to take a long walk. There’s something about the snow, that makes you slow down and take in the sights and sounds all around you.

Soup is one of the easiest meals when hosting others in your home! It’s casual, delicious, and cozy for winter, that is for sure.

Coconut Butternut Squash Soup
Ingredients
- 1 can coconut milk
- 3-4 cups roasted butternut squash with salt and pepper
- 1 leek, thinly sliced
- 1/4 cup oil
- 4 carrots
- 4 stalks of celery
- 1 Tbsp coriander
- 1/2 tsp cayenne pepper
- 2 tsp kaffir lime leaf
- 3 cups chicken or vegetable stock
Instructions
- In a large pot, heat the oil. When hot, add the leeks and sauté on medium high heat until leeks are lightly browned, 8-10 minutes. When cooked, pour in coconut milk, stock, carrots, and celery. Bring liquids to a simmer, and then add in the spices and lime leaf. Salt and pepper lightly, then cover with lid and allow to simmer on medium low for 10 minutes.
- Next, add in butternut squash and continue to simmer for 22 minutes or so. The carrots and celery should be very soft. Taste broth occasionally and add salt and pepper accordingly.
- When all ingredients are tender, transfer to a heat safe blender, and blend until smooth. Taste if any additional salt is needed.
- Serve soup hot with an herb garnish if desired.
I looove that this can be made ahead and stored up to 5 days in the fridge! Perfect recipe for meal prep :)
