This time paired with thinly sliced radishes and snap peas and quinoa.
A simple summer salad.

Rest stops on road trips
One of my favorite memories of road trips as a family when I was younger was stopping for meals at rest stops. We never ate out.
Mom would pack sandwiches, chips, soda pop. Usually a leftover summer salad. It was always packed food from home put into an styrofoam cooler.
My grandparents owned a cabin at Breitenbush Hot Springs, so as a little girl, we’d travel there. We’d also travel once a year to Portland, Oregon.
What’s nice about rest stops and eating there with a picnic is that you can get away from behind the wheel, stretch your legs, and enjoy the view. Kids and pets get to run around!

This salad today reminds me of my childhood, a delicious corn salad. The dressing is out of this world, and this may just be your new favorite picnic salad, too.
Double the recipe and enjoy it all week long. It keeps well in the fridge!

Quinoa Radish Corn Salad Recipe with Green Goddess Dressing
Ingredients
- SALAD: 5 corn cobs, corn cut off
- 5 thinly shaven radishes
- 2 cups snap peas, cut into 2-3 piece segments
- 3 cups cooked quinoa
- Dressing: 2 cups roughly chopped cilantro
- 1/2 cup roughly chopped mint leaves
- 4 green onion stalks
- 1 Tbsp. apple cider vinegar
- 1 juiced lemon
- Salt and pepper to taste
- 1/4 cup olive oil, plus a some
- 1/2 large, ripe avocado
- 1/3 cup unsweetened dairy free or Greek yogurt, I used an unsweetened cashew yogurt
- 2 Tbsp. water
Instructions
- In food processor or blender, combine all dressing ingredients. If dressing is too thick, add in a little water or olive oil. Once smooth and blended, place in refrigerator for later.
- In large bowl, mix together quinoa, snap peas, radishes, and corn.
- Either serve with dressing on the side, or mix the green goddess dressing into the quinoa mixture. Garnish with mint and serve cold!
