Cranberry Almond Chicken Salad Wrap
My partnership with Blue Diamond Almonds provided a great snack for my recent kayaking adventure, delicious in a Cranberry Almond Chicken Salad Wrap!
There are many ways to define adventure. Where we live here in central Oregon, there’s so much to do! But this time of year, kayaking is our all time favorite. My friends came to visit me this past weekend for a girls’ weekend, and and we picked the perfect day to kayak the Deschutes River.
Starting at Haper’s Bridge, we drifted along the soft currents, gazing at gorgeous meadows, with the smell of pine and forest, all under one fluffy cloud that seemed to follow us.
You can see the tip of Mt. Bachelor, still with so much snow!
We eventually took a turn and paddled the Spring River. The Spring River is a tributary, only about 1 mile long, that feeds into the Deschutes River. The crystal clear and cold waters were so beautiful, aqua blue, with the temp about 5 degrees cooler than the Deschutes waters.
We got our workout in, paddling upstream against the wind, and then we pulled over for a rewarding lunch. We sat in the sun, sipping our Kombucha drinks, enjoying a Cranberry Almond Chicken Salad Wrap. So good!

Upstream, we startled two adult Canadian geese and their little ones. We watched cranes flying right in front of our kayaks, and other wildlife along the bank.
Kayaking is so relaxing, and good for the soul–especially when your belly is full of food that’s good for you, and you’re with great friends!

Cranberry Almond Chicken Salad Wrap
Making wraps is super easy. Buy rotisserie chicken, a few fresh ingredients, and add nuts for a crunch (and flavor).
The secret to rolling a tortilla is to heat it in the microwave first.
Wrap the wrap (I like that), and take it with you on your next adventure!

Cranberry Almond Chicken Salad Wrap
Ingredients
- 2 cups chopped romaine lettuce
- 1 cup cooked, shredded or chopped chicken (I use rotisserie)
- 2 Tbsp. dried cranberries
- 4 Tbsp. feta cheese
- Sliced cucumber
- Blue Diamond Roasted Salted Almonds, or your favorite Blue Diamond flavor, roughly chopped
- 2 Tbsp. Caesar or Blue Cheese vinaigrette dressing
- 4 large whole wheat flour tortillas
Instructions
- In a bowl, combine the romaine, chicken, cranberries, feta cheese, and sliced cucumber. Stir to combine.
- Microwave the tortilla for 10-15 seconds, so that it will be easy to roll. Spread the lettuce mixture down the middle of the tortilla. Sprinkle with almonds. Fold in the two sides of the tortilla, then roll up like a burrito.
- Cut wrap in half to serve.
- Any flavor of Blue Diamond Almonds is delicious!
